Gâteaux de voyage: Travel cakes unpacked

Unlike a cream cake, sticky pudding or fancy meringue, travel cakes have to do what is says on the tin: be able to move smoothly from A to B and remain delicious. Why this type of "on-the-go", fuss-free dessert is here to stay and is surely becoming the new buzzword amongst pastry chefs and food businesses alike.
A fuss-free cake rooted in history
What the French elegantly refer to as a “ gâteau de voyage ”, the Brits might just call a nice slice of “teacake” or the Italians a “torta”. Admittedly, the French version sounds more refined and exciting, probably due to the cake’s regal history. In 17 th century France, the Marquise de Sévigné would travel several times a year between Brittany and the Palace of Versailles; she asked her pastry chef to prepare cakes that could be stored over time and be easy to eat during the week-long journey.
Since then, many familiar cake favorites actually come under this “travel cake” umbrella term; think of the ubiquitous brownie, carrot cake and banana bread. They all share the same basic principles: staple store cupboard ingredients, a good shelf life of up to two weeks at room temperature, easy to cut, package and consume on the hop, good for sharing among a group, great for long journeys. No fuss, no cream, not too greasy or crumbly but definitely sweet, indulgent and delicious. The idea of a picnic, boat trip, train ride or car journey suddenly seems ridiculous without one. They make great snacks, and even better gifts.
A sure trend for pastry chefs and brands
The appeal of these ubiquitous treats surely did not go unnoticed amongst seasoned pastry chefs and brands around the world. Take globally acclaimed French pastry chef and Plaza Athénée alum Christophe Michalak and his revisited Sachertorte for Maison du Chocolat or famous Japanese chocolate master Susumu Koyama , "patisserie" chefs are betting on revisiting these nomadic creations.

The challenge? Adapting the staple recipes and tapping into their long-conservation, easy-to-carry qualities, while not compromising on creativity and using excellent, sometimes surprising ingredients. The now cult Ispahan Cake from Pierre Hermé is a perfect example of that: the traditional almond pound cake is elevated with Rose macaron biscuit, rose petal cream, whole raspberries, litchis. As per the brand's website's itself perfectly describes it: "More than a cake, this creation is sheer happiness. Bliss from the first bite." Capitalizing on the success the the original pound cake, the brand is now looking into variations of the Ispahan with a newly-launched Ispahan rum-baba.

As put by pastry chef Vinesh Johny, Co-founder and Chef at the Lavonne Cafe in Bangalore, India: "The Covid era has sure taught us all a lot. Off the many lessons learned, we can all be certain that delivery only/cloud kitchens are here to stay. Getting the food to the customer most effectively at its right temperature and minimal damage is what’s most critical for food businesses. Therefore, I’m certain that future desserts will have to be travel-friendly and portable such that, by the time your cake travels all the way from your restaurant to your customer, it’s still in one piece with its garnish unshaken. Travel-friendly/Portable/ Mobile/To-go Desserts will soon be the buzzword".
Simplicity & perfect execution

Cute Bon Voyage Cake
Bon voyage, mon amour! Je t’aime toujours!
My French kind of stinks these days. I hardly ever use it. But Canada is bilingual, everyone. Je suis bilingue!! We study French in school! I could order poutine in Montreal at least. And I was able to order breakfast in Belgium, and ask for the leftovers to go… although the response I got from the server when I asked in a round-about way in my weird French about taking my leftovers was: “Oh, you mean doggy bag?”
Question to my international blog reader friends:
What do other people in other countries call “leftovers” or “to-go” or “doggy bags”??
On a cakey note, yes, I made this Bon Voyage cake for Norah for her friend Eman. I modelled the cake board and flag after the adorable stripes on an “airmail” envelope. I love stripes! That plane is headed East to Montreal, Quebec!!

Here in New Zealand we use all three of those! It depends on what kind of restaurant you are in.
Super cute cake. I recently tried to cover a very high round cake in fodant. First my fondant was too thick and ripped at the top. I managed to save most of it and roll it out again but ended up having one ugly side where the fondant bunched a little bit. Managed to cover it in decoration but man oh man it was stressfull!

haha, it is not very common in Holland to ask for a doggy bag, the portions are just smaller here. But left overs we call ‘restjes’ and doggy bag, that word we just copied :-).

With a touch of ground ginger, zesty lemon, and crunchy almonds, this cake is practically begging to be savored with a cup of tea or coffee. Is there Greek yogurt in honey cake?
Yes! There’s only a small amount of Greek yogurt in this honey cake, but it makes a huge impact. The yogurt gives the cake a soft, tender texture and lends a subtle tangy flavor. Want to up your dessert game? Serve this cake with a dollop of Greek yogurt, some fresh fruit, and a final drizzle of honey on top.
What's the best way to store honey cake?
Wrap the cake tightly in plastic or place it in an airtight container and store at room temperature for up to 3 days. The cake can also be frozen for up to 1 month. Let the cake thaw at room temperature before serving, or place it in a 300 degree oven for 10 minutes to speed up the process.
Ingredients
Baking spray with flour, for the pan
sliced almonds
all-purpose flour
baking powder
ground ginger
granulated sugar
lemon zest plus 1 tsp. lemon juice
(2 sticks) salted butter, at room temperature
large eggs, at room temperature
vanilla extract
Greek yogurt, at room temperature
Powdered sugar, for dusting
- Step 1 Preheat the oven to 350°F. Spray a 9-inch square baking pan with baking spray. Line the bottom with parchment paper, and spray again.
- Step 2 On a baking sheet, spread the almonds in a single layer and bake until the nuts are fragrant and lightly browned, 7 to 9 minutes. Transfer the nuts to a cutting board, and let them cool completely. Coarsely chop.
- Step 3 In a medium bowl, whisk together the flour, baking powder, and ginger.
- Step 4 To the bowl of a stand mixer fitted with the paddle attachment, add the sugar and lemon zest. With clean hands, rub the zest into the sugar, helping to release the oils and flavors. Add the butter, and mix on low speed until just combined, 1 minute. Scrape the bottom and sides of the bowl, and increase the speed to medium-high and beat until the mixture is light and fluffy, 3 to 4 minutes. Decrease the speed to medium-low and add ½ cup of the honey, beating well to combine. Add the eggs, 1 at a time, and the vanilla, stopping to scrape the bottom and sides of the bowl as needed. Gradually add the flour mixture, alternating with the Greek yogurt, until everything is just combined.
- Step 5 Pour the batter into the prepared pan, using a spatula to spread it into an even layer. Tap the pan a few times on a kitchen towel-lined countertop to remove air bubbles.
- Step 6 Bake until a toothpick inserted in the center comes out clean, 35 to 40 minutes. Allow to cool for 15 minutes. Turn the cake out onto a plate, remove the parchment paper, and turn it over again onto a wire rack.
- Step 7 Meanwhile, in a liquid measuring cup, heat the remaining ¼ cup honey in the microwave in 10-second intervals until thin and pourable, 20 to 30 seconds. Stir in the lemon juice.
- Step 8 Pour the warm honey evenly over the warm cake, and sprinkle with the almonds. Dust with powdered sugar just before serving. Serve warm or at room temperature.

By Siberian standards, Kemerovo Oblast is populous, urban, and industrialized. It lies in the heart of the "Kuzbass" (Kuznets Basin) region, home to the world's largest deposits of coal. Accordingly, most of Kemerovo Oblast's cities developed because of economic opportunities related to the coal industry. As a result, the region's cities are often quite polluted, although the situation has improved since the fall of the USSR. Visitors to the region's cities will find them busy, but not significant tourist attractions in and of themselves. But this is all the more reason to get out into the beautiful and unspoilt (and uninhabited) Siberian countryside!
Russian is the only dish on the menu.
Most visitors will pass through Kemerovo Oblast on the Trans-Siberian Railway , which makes stops at (from west to east) Yurga, Taiga, Anzhero-Sudzhensk , Yaya , and Mariinsk.
There is an airport at Kemerovo ( KEJ IATA ), with flights to/from Moscow , Krasnoyarsk , and in the summer: Anapa , Sochi and Khabarovsk .
Novokuznetsk also has an airport serving flights from Moscow (Domodedovo and Vnukovo Airports), Saint Petersburg , Tomsk and in the summer: Sochi , Krasnodar , and Anapa .
Rail is the most important means of transport in this industrialized region on the Trans-Siberian Railway . The most important junction town is Yurga, junction for the branch going south to Kemerovo .

Kemerovo Oblast - Overview
Kemerovo Oblast is a federal subject of Russia located in the south-east of Western Siberia, part of the Siberian Federal District. This region is also known as Kuzbass . In 2019, “Kuzbass” officially became the second name of Kemerovo Oblast. Kemerovo is the capital city of the region.
The population of Kemerovo Oblast is about 2,604,300 (2022), the area - 95,725 sq. km.

History of Kemerovo Oblast
People began to settle in what is now the Kemerovo region several thousand years ago. The indigenous peoples of the region were Shortsy and Teleuts. In 1618, Russians founded Kuznetsky stockaded town in the south of the present region to protect Russian lands from the raids of the Mongols and Jungars. In 1698, Mariinsk was founded.
In 1721, Mikhailo Volkov found “burning mountain” (a burning coal seam) on the banks of the Tom River and thus became the person who discovered the Kuzbass coal deposits. Industrial development of this land started at the end of the 18th century.
During the 19th century, the territory of the Kemerovo region was part of the Tomsk province. During this period, the first industrial enterprises appeared here: Tomsk ironworks, Gavrilovsky and Gurievsky silver plants, Suharinsky and Salairsky mines. Construction of the Trans-Siberian Railway was one of the main reasons for the rapid development of the local industry.

In Soviet times, the region became part of the West Siberian krai, and then - Novosibirsk oblast. The development of the coal, metallurgical and chemical industries continued: Kemerovo Coke Plant, Kuznetsk Metallurgical Plant, a lot of new mines. The workers’ settlements built near the industrial enterprises quickly obtained the status of towns: Kiselyovsk, Osinniki, Krasnobrodsky, Tashtagol, Kaltan, Mezhdurechensk and others.
During the Second World War, this region was a major supplier of coal and metal. More than 50 thousand tanks and 45 thousand aircraft were produced using steel from Novokuznetsk. 71 industrial enterprises were evacuated to Kuzbass from the occupied regions, most of them remained in the region after the war.
In 1943, Kemerovo Oblast became a separate region that included 17.5% of the territory and 42% of the total population of Novosibirsk Oblast. After the war, the region continued to grow rapidly. On September 18, 1984, about 100 km from Kemerovo, a peaceful underground nuclear explosion was carried out, the power of the explosive device was 10 kilotons.
In the 1990s, the region’s economy declined. However, by the end of the 20th century, there were some positive developments - the development of the coal industry in the first place. Special attention was paid to the development of open-pit coal mining, as a more effective and safe way.

Kemerovo Oblast is one of the few Russian regions that has a recognized and well-known alternative name “Kuzbass” - the abbreviation of “Kuznetsk coal basin” occupying a large part of the territory of the region.
It is the most densely populated part of Siberia. The length of the region from north to south is about 500 km, from west to east - 300 km. Russians make up more than 90% of the population. There are small nations of Shortsy, Teleuts, Siberian Tatars who have preserved their cultural traditions.
The climate is sharply continental with long cold winters and warm short summers. The average temperature in January is minus 17-20 degrees Celsius, in July - plus 17-18 degrees Celsius.
Today, about 86% of the population of Kemerovo Oblast lives in cities and towns making it one of the most urbanized regions of Russia. The largest cities are Kemerovo (548,000), Novokuznetsk (540,000), Prokopievsk (185,000), Mezhdurechensk (95,400), Leninsk-Kuznetsky (91,600), Kisilyovsk (83,700), Yurga (79,700), Belovo (70,100), Anzhero-Sudzhensk (65,700).
Sheregesh, a village located at the foot of Zelenaya Mountain in Tashtagol district, is one of Russia’s most popular ski resorts. The ski season lasts from November to May. Kuznetsky Alatau Reserve and Shorsky National Park are the main natural attractions.
Kemerovo Oblast plays a significant role in Russian industry. The following mineral resources are mined here: coal, gold, silver, iron ore, manganese ore, aluminum, nepheline ore, lead, zinc, barite, quartz, limestone, clay, dolomite, sand.
Kuznetsk coal basin is one of the largest coal basins in the world. The most important centers of the local coal industry are Prokopyevsk, Mezhdurechensk, Belovo, Kemerovo, Novokuznetsk, Osinniki, Leninsk-Kuznetsky. Coal mines can be found almost everywhere in the Kemerovo region. About 180 million tons of coal is mined annually.
Rail transport is well developed in the region. The Trans-Siberian Railway, the South Kuzbas branch of West Siberian Railway cross its territory. There are large airports in Kemerovo (Kemerovo International Airport) and Novokuznetsk (Spichenkovo Airport).
