6 salad recipes by Michelin-starred chefs

1. jean-georges vongerichten's shrimp salad.

For a light starter to any meal, try the acclaimed chef’s steamed shrimp salad with two dressings. We love this salad for its simplicity - just fresh shrimps and mixed greens come together with two different types of luxurious sauces.

  • Start by peeling and deveining the shrimp then split them in two, keeping the tails attached.
  • Place on a buttered dish, season and grill for about 1 and a half to 2 minutes.
  • Plate up with seasonal salad greens, sliced avocado, enoki mushrooms and diced tomatoes.
  • Drizzle with the first dressing (1 part soy sauce, 1 part lemon juice, 1 part truffle juice and 3 parts olive oil).
  • Add chopped chives then the second dressing, a reduction of shallots, Champagne vinegar, cream and butter.

2. Gordon Ramsay’s spicy beef salad

Gordon Ramsay's salad recipe makes use of a great piece of beef and turns it into an Asian-inspired salad full of fresh cherry tomatoes, mixed greens, and herbs. The salad dressing is bright and spicy, made with fiery red chilies, fish sauce, lime juice, and mint. The entire salad is topped off with toasted peanuts.

  • Start by seasoning the steak generously and sear in a hot pan with olive oil. Turn once and cook for 2 and a half minutes on each side. Allow to rest.
  • Make the spicy dressing: deseed a chilli and chop, crush in a pestle and mortar with a peeled garlic clove and salt. Add two teaspoons of palm sugar, fish sauce and fresh lime. Mix until the sugar dissolves.
  • Prepare the vegetables and coat in the dressing.
  • Plate up with the sliced, rested steak. Top with crushed, toasted peanuts.

3. Daniel Boulud’s favourite salad recipes

Chef Daniel Boulud creates two super easy summer salads - one with a medley of tomatoes, another with peaches and Parmesan cheese. If you're used to making tomato caprese salad, try the starred-chef's version with labneh instead.

Labneh, a Middle Eastern fresh cheese, is easily made at home - simply wrap a cheesecloth over some greek yoghurt and hang over a bowl in the fridge overnight. The result will be a fresh cheese with a cream cheese-like consistency that can take on any flavour you wish in a dish.

  • For the tomato salad: cut heirloom and cherry tomatoes into wedges and season. Make a dressing with tomato water, lemon juice, garlic, honey, sumac, olive oil, salt and pepper. Plate up with drained labneh, sliced avocado and shallots before garnishing with basil and a pinch of sumac.
  • For the second summery salad: use a leafy green base with herbs and add flaked pecorino cheese to cooked quinoa and sliced peach. Sprinkle with toasted almonds and chopped black olives. Drizzle with a Champagne vinaigrette or balsamic dressing.

2 Caesar salads: Thomas Keller vs Massimo Bottura

4. Thomas Keller Caesar salad

If you are after a good old caesar, Thomas Keller's salad is where it’s at. In this video for the New York Times , the chef goes through each and every element of this American classic, from what olive oil to use, why you use anchovies in the dressing, to what type of salt you should be sprinkling on your salads. This is the guide to help you make the best Caesar salad of your life.

  • Make the anchovy paste.
  • Grate the parmesan cheese onto a baking sheet to make a parmesan crisp.
  • Add a garlic clove and coarse salt to the anchovy paste to perfume the bowl with garlic.
  • Add a raw egg and blend until it coats the back of the spoon. Gradually add olive oil to emulsify.
  • Add the torn salad leaves to the emulsified dressing and another pinch of salt. Grind black pepper over the top and squeeze lemon juice.
  • Grate more fresh parmesan into the bowl and add broken pieces of the parmesan crisp. Toss all the ingredients together.
  • Plate up and garnish with more grated parmesan and single brown anchovies.

5. Massimo Bottura’s Caesar salad

Called Modena to Dubai, Bottura’s salad shares a few elements in common with the Caesar salad, but is something entirely new that only Bottura can create. Ingredients like Parmesan cheese mingle with balsamic vinegar from Bottura’s hometown of Modena, as well as ingredients unique to the Middle East.

While we don't recommend it, you may (if you absolutely must) substitute the balsamic vinegar with red wine vinegar if you can't find it, and go for a good mix of baby greens and edible flowers for visual effect.

  • Arrange the base leaves and herbs delicately. Grate a boiled egg yolk before adding dots of extra virgin olive oil and caesar salad sauce.
  • Drizzle in balsamic vinegar and dot with lemon gel.
  • Add thin slices of crunchy bread and parmesan crisps to garnish.

6. Enrico Crippa’s 21-31-41 salad recipe

This is one of Crippa’s most famous recipes, partly because it uses a whopping 40+ ingredients for a salad that is kept entirely raw. His process of picking all the ingredients, such as succulents, greens, roots, and flowers from his two gardens makes for fascinating viewing, and the resulting salad is a symphony of raw flavours.

You won't find any feta cheese or red onions here. Rather, the entire dish is about tasting the incredible diversity in flavours and textures of greens - some familiar, some not so much. Use it as a guide to creating your own composition of fresh vegetables.

  • Prepare the fresh salad leaves and herbs.
  • Assemble the dish by combining the leaves, add a pinch of salt, sesame needs and nori seaweed.
  • Add candied ginger water, julienned pieces of candied ginger, some drops of Barolo wine vinegar and extra virgin olive oil. Stir together carefully.
  • Add aromatic herbs and assemble. Top with hazelnuts.
  • Garnish with edible flowers to add colour.

Salads provide an endless source of creativity in the kitchen. 18 Italian Salads to Fall in Love With

© Greg DuPree

These Italian-inspired salads bring a rainbow of colors and big flavors, with a variety of produce from each season. We've got simple salads, like a three-ingredient chicken caprese and a shaved raw asparagus salad , and main course-worthy salads, such as giardiniera with ham and beans . We've included pasta salads and seafood salads, too. Whichever greens or combination of things you're craving, this collection of Italian salad recipes is a great place to start.

Warm Castelfranco with Vincotto and Blu di Bufala

This simple and magical combination of ingredients from chef Carlo Mirarchi includes Castelfranco (a mild radicchio), vincotto (aged vinegar), and the superb blue cheese blu di bufala. It's a very Italian dish, but Mirarchi gives it a personal imprint by adding fish sauce to the dressing.

Summer Farro Salad

Chef Marco Canora says you can swap in any starch — like bread or pasta — for the farro in this recipe. Canora simmers farro in water with sautéed onion, carrots, and celery. The aromatic vegetables add delicate flavor to the cooked grains.

Antipasto Salad with Bocconcini and Green-Olive Tapenade

Chef Nancy Silverton is an Italian cooking expert, getting the biggest flavor from the simplest ingredients. She does just that with this hearty salad, which combines crisp iceberg lettuce, milky mozzarella, spicy-tangy peperoncini, and salty olives and salami.

Tomato, Haricots Verts, and Potato Salad

This rustic Italian salad is a great way to showcase perfect, in-season produce. Swap out the summer tomatoes and green beans for roasted root vegetables and fennel in the winter, or asparagus and shaved artichokes in the spring — the possibilities are endless.

Shaved Raw Asparagus with Parmesan Dressing

Asparagus often makes wine taste vegetal. To counter that, chef Mark Ladner mixes shaved spears with a supremely wine-friendly ingredient: Parmesan.

Big Italian Salad

Part green salad, part antipasto salad, this recipe combines lettuce, celery, onion, peperoncini, olives, and cherry tomatoes — all tossed in a dressing made with olive oil, vinegar, and a little mayonnaise.

Crunchy Vegetable Salad with Ricotta Crostini

Chef Michael White's fennel-asparagus salad uses a variety of herbs, including chervil and lemon balm, but it's equally delightful here made with just basil and tarragon.

Giardiniera with Ham and White Beans

This recipe is a nod to the pickled vegetables (giardiniera) in a Gramercy Tavern salad. Former F&W editor Grace Parisi quickly soaks baby cauliflower in vinegar and sugar, then combines it with snap peas, white beans, ham, and sunflower seeds to create a unique main-course dish.

Serrano Ham and Arugula Salad with Pomegranate Salsa

This vibrant winter recipe, layered with arugula, bright white slices of ricotta salata, and strips of salty serrano ham, is the sort of composed salad that chef Suzanne Goin uses to showcase seasonal ingredients.

Spring Peas and Greens with Cacio e Pepe Dressing

Inspired by cacio e pepe (cheese and pepper), the classic Italian pasta sauce, this salad features spring greens and fava beans topped with a delicious buttermilk dressing.

Lemony Chickpea Salad

Serve chef Tom Colicchio's fresh-tasting chickpea salad with warm, soft pita bread to soak up the olive oil dressing.

Chicken Caprese Salad

Bocconcini (mini mozzarella balls) are often sold floating in herbed olive oil. That tasty oil is essential to this three-ingredient recipe because it adds so much flavor to both the chicken marinade and the dressing.

Warm Puttanesca Pasta Salad

Most tomato varieties are at their peak in the summer, but cherry tomatoes are reliably good all year. Combine them with crispy prosciutto, fragrant herbs, anchovies, shallot, and olives for a vibrant pasta salad that's delicious warm or at room temperature.

Insalata di Pesce

Master Sommelier Pavle Milic gave us the inspiration for this seafood salad, which pairs beautifully with white wines. Quickly poaching the mixed seafood gently cooks each piece to perfect doneness for tender, flaky bites. Choose a favorite olive oil here; its flavor permeates the whole dish and adds a savory vegetal flavor.

Fennel and Citrus Salad with Mint

© Con Poulos

For his light, simple salad, chef Matthew Accarrino of San Francisco's SPQR mixes grapefruit and orange segments with shaved fennel and a sweet-tart honey-lemon dressing.

Tomato, Basil, and Cucumber Panzanella with Grated Tomato Balsamic Vinaigrette

This summer blockbuster panzanella from Samin Nosrat, author of Salt, Fat, Acid, Heat , pairs oven-roasted sourdough croutons with juicy ripe tomatoes, raw red onion, and crisp cucumbers. Grated tomato adds a gentle acidity and chunky texture to the vinaigrette, helping it cling to every bite.

Fregola with Charred Onions and Roasted Cherry Tomatoes

Fregola is a bead-shaped pasta from Sardinia; it's nicely chewy and can be used as a phenomenal base for a summer salad. Chef Jeff Banker roasts cherry tomatoes in the oven before he adds them to the fregola, which makes them especially sweet.

Pan-Seared Octopus with Italian Vegetable Salad

Chef Vinny Dotolo describes this salad's genesis: "I originally wanted to do an octopus sandwich, with the flavors of an Italian sub, but the bread got in the way." Now he sears the octopus, braises it in white wine until tender, and tosses it with chickpeas and a tangy mix of marinated carrots, fennel, and celery.

Favorite italian salad.

italian salads gourmet traveller

This fresh and flavorful Italian Salad is made with crisp lettuce, ripe tomatoes, red onion, sliced black olives, crunchy croutons, Parmesan cheese and zesty pepperoncinis. All of that deliciousness gets tossed in an easy homemade Italian vinaigrette for an irresistible side dish, you’re going to want to serve with everything. It’s also great topped with chicken, shrimp or fish for a light lunch or dinner.

Italian salad served on a large white plate.

Made this Italian salad for a small dinner party! Everyone loved it! Two people even asked for the recipe! — Jeanne

I’m a total salad person. In fact, I try to eat a salad with all of my dinners (and many lunches, too!), no matter what is being served. My favorite salad to whip up is this tasty Italian salad. It goes with just about everything from pasta to steak, and is super easy to throw together. There isn’t anything too fancy about it, but it has the best taste. Plus, it’s a great way to get in extra veggies!

Why you should make this recipe

  • So delicious. This easy Italian salad is the perfect salad for weeknight meals , but it is also great for serving to family and friends at dinner parties and potlucks because it is SO good.
  • Easy to make. Everyone loves this salad recipe, yet there’s nothing complicated about it. Sometimes simple is best and that is true with this crowd-favorite recipe. It is perfection without any fuss!
  • The perfect Italian side. We love this salad served alongside our favorite Italian-inspired recipes from spaghetti and meatballs to this easy baked chicken parmesan . And it’s a must when I bake up my easy lasagna recipe !

Salad topped with croutons, red onion, tomatoes and dressing.

Ingredients needed

Like most salad recipes, this Italian salad is completely customizable with whatever ingredients you love best. Go ahead and get creative and make this recipe your own! Below are the ingredients my family enjoys most:

  • Greens.  I usually use chopped Romaine lettuce, but a bag of mixed spring greens or iceberg lettuce works great too. Use whatever you have in the fridge!
  • Red onion.  Sliced red onion gives the salad a pop of flavor and color. If you are not an onion fan, you can leave it out.
  • Tomatoes.  It’s not an Italian salad without the tomatoes! I like to use cherry tomatoes or grape tomatoes. If it is tomato season and your garden is producing lots of large tomatoes, feel free to chop up big tomatoes and use them.
  • Black olives. Black olives are my favorite, but you can totally leave them out or use another olive variety.
  • Pepperoncini peppers. Zesty pepperoncini peppers really complete this recipe! However, if they’re not your thing or you don’t have them available, no worries.
  • Parmesan cheese.  Use a high-quality Parmesan cheese, not the stuff in the green can. You can use shaved or freshly grated. And if you want to mix up the cheese, feta, goat, or shredded mozzarella cheese would also be delicious.
  • Croutons.  For extra crunch! My kids’ favorite part of this salad are the croutons. Who can blame them?! If you want to make homemade croutons, I love this homemade crouton recipe !
  • Homemade Italian vinaigrette.  The star of the salad! This vinaigrette is an easy mix of extra virgin olive oil, red wine vinegar, Dijon, garlic powder, dried oregano, salt and pepper. We actually love this vinaigrette on all kinds of salads!

Lettuce, tomatoes, onions, cheese, croutons and black olives divided into small portions.

How to make this recipe

Italian salad can be tossed together while your main entrée is cooking. It can also be made in advance. To make ahead , add all of the ingredients (except croutons and tomatoes) to a large salad bowl. Cover with a slightly damp paper towel and then loose plastic wrap over that. Refrigerate up to 24 hours.

Tearing the lettuce leaves, instead of using a knife to cut them, prevents the greens from wilting or bruising as quickly, if you’re preparing this ahead of time.

  • Wash and dry the veggies and tear the lettuce into pieces.
  • Grab the rest of the ingredients and slice and chop vegetables.
  • Make the Italian vinaigrette.
  • Toss everything together in a large bowl and serve.

Don’t add the vinaigrette until just before serving, to avoid a soggy salad.

Drizzling dressing over a salad with a spoon.

How to make the dressing

My favorite thing about this salad is the homemade Italian dressing ! It’s easy to whisk together, with ingredients you probably already have in your kitchen. I love it so much more than store-bought dressing. You can make the vinaigrette in advance and keep it in the fridge for about 2 weeks. It’s great to have on-hand if you need to make a quick weeknight salad!

To make this Italian salad dressing , you’ll simply need to combine oil with red wine vinegar and seasonings. The oil and vinegar in vinaigrette dressings can separate, so it’s important to include the teaspoon of Dijon to keep the mixture from separating. You’ll also want to shake it up before each use. I like to whip mine up and store it in a mason jar with a lid.

Olive oil, red wine vinegar, dijon mustard and seasonings divided into small bowls.

Expert tips

This is super easy to toss together, but here are a few tips for the perfect Italian chopped salad!

  • As previously mentioned, my family seriously loves this tossed with my easy Italian vinaigrette dressing, but you can use any dressing you’d like from blue cheese dressing  to homemade ranch dressing .
  • You can add other Italian-style ingredients to your salad such as sun dried tomatoes, marinated artichoke hearts, banana peppers, bell peppers, prosciutto, salami, kalamata olives, basil, parsley and/or pine nuts.
  • This makes a great side dish, but amp it up and serve it as a main dish! I often enjoy it topped with my favorite grilled chicken . It’s also great with my foolproof pan fried salmon . And to keep it vegetarian, try adding chickpeas, white beans or even kidney beans.
  • A good quality olive oil is a must to make the BEST vinaigrette! This olive oil is my favorite and I also really like this more budget-friendly olive oil as well.

Frequently asked questions

Surprisingly, a classic Italian salad like this one is not commonly served in Italy. A popular recipe, originally from Sicily, is the Insalata di finocchi e arance. Although there are many variations, it is usually made with a combination of orange slices, thinly sliced fennel, onions, black olives, olive oil, salt, and mint. Another popular option is Insalata di tonno e fagioli made with a combination of red onions, olive oil, salt, pepper, cannellini beans, and tuna.

Three important things to keep in mind when making any salad are making sure the ingredients are fresh, the ingredients pair well together, and that it is presented nicely.

This Italian salad recipe is packed with fresh vegetables and the vinaigrette is simple and includes hearty-healthy olive oil. One large serving with dressing is 275 calories, 17 grams of carbs and 8 grams of protein. You can use less dressing to cut down on calories and fat. This recipe is naturally gluten free, depending on croutons, is vegetarian, and can easily be made vegan by using a dairy-free parmesan cheese or omitting. See the recipe card for more nutrition information.

Storing salad

Like most salad recipes, once the salad and dressing have combined, it is hard to store for any length of time. The dressing will quickly start to make the lettuce and croutons soggy. Only dress what you plan on eating and store the salad and dressing separately for longer storage. Both will keep in an airtight container in the fridge for 2-3 days.

20 Best Italian Salads Full of Color and Flavor

Italian Salads

Italian salads are a delight for the palate and the senses. These salads are a culinary journey through Italy’s diverse regions. They offer a taste of the country’s rich heritage and vibrant traditions.

Each of these delicious recipes will transport you straight to the heart of Italy.

Caprese Salad

Whether you’re craving a classic Caprese or hearty Panzanella, this list has you covered.

Get ready to embark on a gastronomic adventure! Celebrate the time-honored culinary expertise of Italy with these tempting salad recipes. Buon appetito!

1. Caprese Salad

The Caprese salad isn’t just beloved in Italy. It’s famous all over the Mediterranean. People love its light, bright taste. The refreshing flavor of the tomatoes and balsamic glaze can’t be topped.

Those big chunks of fresh mozzarella don’t hurt, either. Try it for something fresh, filling, and fantastic.

2. Panzanella

If you’ve never tried Panzanella, get ready for a surprise. Its main ingredient isn’t a veggie. It’s bread! Specifically, it’s bread chunks covered in olive oil and seasonings, soaked in a tangy dressing.

The colorful salad also boasts tomatoes, onions, fresh basil, and Parmesan cheese.

3. Italian Octopus Salad (Insalata di Polpo)

Yes, this salad contains actual octopus! It’s an adventurous dish you won’t forget.

It also features potatoes and onions. The tart and zesty dressing complements the umami-sweet octopus perfectly.

4. Italian Rice Salad (Insalata di Riso)

If it weren’t for the rice, this salad would look more like salsa. It shares many of the same ingredients as salsa, including cilantro.

However, the rice and zingy dressing set it apart from traditional salsa. If you like salsa’s bright, juicy flavor, you’ll also appreciate insalata di riso.

5. Italian Antipasto Salad

The Italian antipasto salad looks like the salads Americans are used to eating. It features a base of lettuce and tomatoes with olives, feta, pepperoni, and more.

It’s a nice balance of meat and veggies and will keep you full without making you feel heavy. The tangy lemon herb dressing is also incredible. Double (or triple) it and bottle it for later to adorn any other salads you whip up.

6. Italian Salad with 3 Lettuces (Insalata Tricolore)

This beautiful salad is light, fresh, refreshing, and brightly colorful. It features red, white, and green greens as its base. It’s ideal for a holiday spread!

There’s not much to this salad. It’s made with arugula, endive, and radicchio. It also has some Parmesan and a zesty dressing. Despite its simplicity, it pairs perfectly with most main courses. It’s also incredible ’til the last bite.

7. Italian Sub Broccoli Salad

Wondering how this salad got its name? From a submarine sandwich, of course! As the recipe explains, it has all the flavor of “an Italian Hero sandwich, turned salad.”

There are tons of different flavors, colors, and textures. Every bite has something new to discover.

It has crunchy broccoli florets and chickpeas. There are also flavorful onions and herbs. Juicy tomatoes, cheese, and four different types of meat complete this masterpiece!

8. Italian Tortellini Pasta Salad

Is there anything better than cool, refreshing pasta salad dishes? This Italian tortellini pasta salad is one of my favorites.

It starts with a base of filling cheese tortellini. Then, add a fantastic dressing, salami, cheese, and tons of veggies.

It’s pure Mediterranean fare at its finest. You’ll love it!

9. Italian Arugula Parmesan Salad with Sun-Dried Tomatoes

This salad is a mix of arugula, Parmesan, and sun-dried tomatoes.

Top it off with a simple dressing made of olive oil, balsamic vinegar, maple syrup, salt, and pepper, and you’re all set.

10. Italian Orzo Salad

Who can say no to a dense salad packed with tasty ingredients? That’s what you get with this Italian orzo salad.

The orzo base is dense and hearty enough, but it doesn’t stop there. It also features spinach, cucumbers, salami, feta, and more yummy ingredients!

It’s a great salad for potlucks or backyard BBQs. Plus, it doesn’t contain ingredients that get too soggy. So it’s an excellent make-ahead salad.

11. Burrata Caprese

Here’s a twist on the classic Caprese salad. It tastes just as bright and fresh but uses burrata cheese instead of mozzarella.

The burrata gives the salad a softer, creamier mouthfeel but tastes just as good.

12. Italian Cannellini Bean Salad

Indulge in a dance of flavors with this Italian cannellini bean salad! It’s a vegan treat everyone will love.

It features white beans, roasted bell peppers, olives, marinated red onions, and vegan cashew cheese. But even non-vegans will flip for it!

It’s a Mediterranean fiesta for your taste buds, where every bite sings “delizioso!”

13. Italian Giardiniera

Are you a sucker for chili peppers? If so, you won’t be able to get enough of Italian giardiniera. The word “giardiniera” literally means “pickled vegetables.”

In this case, it’s more like three types of peppers and other veggies tossed in a pickled-like dressing. There’s a little spice, a lot of tanginess, and a ton of flavor.

14. Italian Shrimp Pasta Salad

You really can’t go wrong with a shrimp salad, no matter what you add to it. That’s definitely true for this light and zingy shrimp pasta salad.

Serve it as a stand-alone meal or a side to a larger seafood dish. Either way, it’s flavorful, filling, and addictive.

15. Italian Chickpea Salad

Here’s another yummy Italian bean salad. Only this one uses chickpeas instead of cannellini beans.

It’s fresh and colorful, with loads of veggies and a balsamic-based dressing that’s out of this world. You can make it from scratch with fewer than 10 ingredients in about 20 minutes.

16. Italian Farro Salad

Italian farro salad is a hearty, nutritious dish. It combines cooked farro grains with fresh veggies, herbs, and a tangy dressing.

Its earthy flavors and chewy texture create a satisfying blend. And the tomatoes, cucumbers, and herbs provide a refreshing contrast.

It’s customizable with additions like feta cheese or roasted nuts. It’s a wholesome Mediterranean delight.

17. Insalata Della Casa

Here’s another great option if you’re looking for something more traditional. With its bed of romaine and iceberg lettuce and all the veggies, della casa is a classic.

It even has classic “American” ingredients like bacon bits, cheese, etc.

What makes it stand out are the fried rice noodles on top. And if you don’t like those, you can always go with croutons instead.

18. Sicilian Cauliflower Salad

Want a quick and easy veggie-packed side dish? Try this Sicilian cauliflower salad. It has lots of crunchy cauliflower, juicy tomatoes and olives, and salty capers.

It takes a little time to make, but it’s well worth the effort.

19. Italian Radiatore Pasta Salad

You can never have too many cool, creamy pasta salad recipes, so here’s one more. It’s a veggie-packed, cheesy, tangy Italian pasta salad, everyone will devour.

It’s also dairy-free, so it can safely sit out for hours at a time.

20. Italian Mixed Salad (Insalata Mista)

Insalata mista is an Italian mixed salad made with arugula and veggies. People often serve it with grape tomatoes, pine nuts, and shaved Parmesan.

It’s tossed with balsamic vinaigrette. It’s light, simple, and unassuming. It tastes great and pairs well with any main course.

We love anything from Gourmet Traveller and I found this recipe in one of their books I picked up in a local community library.

And sure, it is a simple recipe though in fairness, the book is called ‘Simple’. Doh!

And excuse the photo which was more about the memory rather than publishing: for the fish is great though my goodness, we both agreed this is one of the best potato salads we have ever had. (And we didn’t see it coming.)

And of course, it is simple!

The next time we are asked to bring a salad to a BBQ, this is it.

Though do the fish as well. Just a cracking and special weekday meal.

Ingredients

1/4 c flat-leaf parsley leaves, chopped Grated rind of 1 lemon 3 c day-old breadcrumbs, dried in oven until crisp 2 tsp capers, drained and chopped 12 whiting fillets (we used John Dory) 1/2 c plain flour 1 egg, lightly beaten with 1 tbsp water* Vegetable oil, for shallow frying Lemon wedges to serve

2 tbsp sour cream 2 tbsp whole-egg mayonnaise 1 tbsp Dijon mustard

Warm baked potato salad

800gm chat potatoes, halved 2 tbsp extra virgin olive oil 1 small Spanish onion, thinly sliced 2 tbsp chopped flat-leaf parsley leaves 1 tbsp chopped sage leaves

  • For dressing, whisk all the ingredients with 1 tbsp water in a small bowl until well combined, then season to taste.
  • For warm baked potato salad, place potatoes in a roasting tray, drizzle with the olive oil, season to taste, and toss gently to combine. Bake at 200c for 20 minutes, then add the onion, toss to combine and bake for another 10 – 15 minutes or until the vegetables are cooked. Just before serving, toss the potato mixture with dressing, then gently stir the herbs through.
  • Meanwhile, combine parsley, lemon rind, breadcrumbs and capers in a shallow bowl and season to taste. Dust fish in flour, shaking away excess, and dip in egg mixture, then coat in breadcrumbs mixture, pressing crumbs onto the fish to coat evenly. Shallow-fry crumbed fillets, in batches, in hot vegetable oil for 2 minutes each side or until golden and cooked through, then drain on absorbent paper.
  • Serve crumbed fish immediately with warm baked potato salad and lemon wedges to the side.

* It is a bit of a bugbear of ours, though you will always need at least twice the egg mixture called for so prepare yourself for this inevitability.

The Armoury Chamber is a part of the Grand Kremlin Palace’s complex and is one of the oldest museums of Moscow, established in 1851. It showcases Russian history and displays many cherished relics. Definitely make sure to check out this museum while you’re here!

The Moscow Kremlin

The churches inside the Moscow Kremlin are the Cathedral of the Dormition, Church of the Archangel, Church of the Annunciation, and the bell tower of Ivan Veliki (a church tower).

The five-domed Cathedral of the Dormition is considered the most famous. It was built from 1475–1479 by an Italian architect and has served as a wedding and coronation place for great princes, tsars, and emperors of Russia. Church services are given in the Kremlin’s numerous cathedrals on a regular basis.

The Grand Kremlin Palace was the former Tsar’s Moscow residence and today it serves as the official workplace of the President of the Russian Federation (Vladimir Putin seems to have bagged that title for life) .

This iconic cathedral has become a symbol of Russia due to its distinguishing architecture and prominent position inside the Red Square. It’s one of the most beautiful, wonderful, and mesmerizing historical cathedrals in the world!

St. Basils Cathedral

The interior of the church surprises most people when they visit. In contrast to the large exterior, the inside is not so much one large area, but rather a collection of smaller areas, with many corridors and small rooms. There are 9 small chapels and one mausoleum grouped around a central tower.

Visiting the inside is like walking through a maze, there are even small signs all around the cathedral tracing where to walk, and pointing you in the right direction! The walls are meticulously decorated and painted with intricate floral designs and religious themes.

The church rarely holds service and is instead a museum open for the public to visit.

The Alexander Garden was one of the first urban public parks in Moscow! The garden premiered in 1821 and was built to celebrate Russia’s victory over Napoleon’s forces in 1812!

The park is beautiful and well maintained with paths to walk on and benches to rest on. The park contains three separate gardens: the upper garden, middle garden, and lower garden.

The Alexander Garden

Located in the upper garden, towards the main entrance to the park is the Tomb of the Unknown Soldier with its eternal flame. This monument was created in 1967 and contains the body of a soldier who fell during the Great Patriotic War!

The park stretches along all the length of the western Kremlin wall for about half a mile. Due to its central location in the city, it’ll be easily accessible when you’re out exploring The Red Square.

If you’re planning a solo Moscow itinerary, you should have no need to worry, as the city is also considered safe for solo travelers, even women. Stay in the populated areas, try and not travel alone late at night, and never accept rides from strangers or taxis without a meter and correct signage.

The threat of natural disasters in Moscow is low, with the exception of severe winters when the temperature can dip below freezing! Bring a good, warm jacket if you visit in Winter.

However, please note that Russian views on homsexuality are far less accepting than those in Western Europe. Likewise, Non-Caucasian travellers may sadly encounter racism in Russia .

Pinzeria by Bontempi is a network of eateries where you can taste pinza, a unique dish created by Valentino Bontempi, an Italian chef and the author of bestselling gastronomy books. The chef restored the lost recipe, and now everyone in Moscow can taste an oval-shaped, tender delicacy. In addition to almost 30 varieties of pinza, the restaurants serve home-made pasta, gluten-free dishes, and vegan food. A real paradise for healthy lifestyle enthusiasts!

Average bill: 3,200 – 4,100 rubles

Sartoria Lamberti is a luxurious restaurant inside the Ritz-Carlton Hotel, not far from the Moscow Kremlin. But it is famous not for its location, but for its unique concept and haute cuisine. Right after the threshold, there is a shop where a seamstress embroiders monogrammed gifts for visitors. The restaurant’s interior is designed as a tailor's shop, with columns in the form of thimbles, mannequins, lamps looking like men's cuffs, cutlery with needle ears on handles, and other attributes of an atelier. The menu includes classical Italian dishes, such as minestrone , seafood risotto, and black truffle linguine. And true gourmands will appreciate exclusive haute cuisine masterpieces. There is an open kitchen with a wood-burning oven and a grill, where meat, fish, and seafood are cooked. The bar offers a good choice of wines and a variety of signature cocktails, which can be prepared and presented right at your table. A good place for fine dining lovers!

Average bill: 2,500 – 3,000 rubles

If you have a taste for mussels , then Mollusca is right for you. Very few restaurants can boast of 101 sauce recipes for this popular seafood. You can choose between creamy, salty, or chocolate flavors. The restaurant's menu includes many other culinary delights: sea bass crudo, salad with grilled squid, Neapolitan-style fritto misto, and many others. All this diversity is the creation of Gianmaria Sapia, a hereditary chef from Liguria. Mollusca has three locations in the central districts of Moscow. The interior of the restaurant is designed in the style of Art Nouveau with Art Deco elements.

It's an authentic no-bake Italian dessert with a coffee flavor. It means 'cheer me up' because of the two caffeine-containing ingredients - coffee and cocoa. Tiramisu is made from espresso-dipped ladyfingers and mascarpone cream.

Casa di famiglia is a network of cozy Italian restaurants located in the residential areas of Moscow. They are very popular with the locals due to their family concept, average prices, and good choice of pizzas. The menu has 19 pizza variants, including vegetarian ones. Here, you can order practically all Italian hits: pastas, bruschettas, risotto, and authentic tiramisu and semifreddo desserts. But it is not only good cuisine, but also a warm atmosphere that attracts visitors here. "Casa di famiglia" is translated as "family home," and the place deserves this name. There is a special children’s menu. And while adults are having a chat, kids can have fun under the supervision of animators in a playroom.

This traditional Italian dish comes from Bologna and it seems the oldest type of pasta. Lasagna is stacked layers of wide and flat pasta and a variety of other ingredients, including sauce, vegetables, cheese, meat, etc. The word 'lasagna' refers to a pot where this dish was cooked.

Vabene! reminds one of old Italian trattorias: brick walls, colorful tablecloths, designer lamps without shades, and paintings on the walls. You’ll find 25 pizza types of 3 different sizes here: 30, 38, and 80 cm. The wine list has several options by glass and about 50 in bottles. In the morning, the restaurant offers fixed-price breakfasts, including the branded one. Vabene! is also known as a delivery service where you can order all Italian cuisine dishes, from classical pizzas, pastas, and lasagnas to gourmet beef tagliata and vitello tonnato.

This dish comes from the region of Lombardy and the word means 'bone with the hole'. Ossobuco is made from cross-cut veal shranks that are slowly braised with vegetables, broth and white wine. Braising makes this tough meat tender. It is usually served with mashed potatoes.

Average bill: 1,300 – 2,700 rubles

La Bottega Siciliana is a little island of authentic Sicilian cuisine near the Red Square and the Bolshoi Theater. The restaurant is divided into 3 parts: a pastry shop, a hall with a view of the open kitchen, and a cozy hall with a fireplace. The menu is rather diverse and includes all popular Italian dishes. Seafood lovers will enjoy sea urchins, oysters, wild fish ceviche, and shrimp crudo. And true gourmands are advised to taste ossobuco Milanese, a venetian-style calf-liver, and an eggplant dish made according to chef Nino’s recipe. The pastry shop serves more than 30 desserts and genuine Italian gelato.

Botteganova Organic is a place where the dreams of healthy lifestyle fans come true. This is a family restaurant where the love of Italian gastronomy coexists with the idea of healthy eating. All the products are carefully selected and purchased from the best farms. In addition to pasta and pizza, the menu has steaks and fresh seafood  cooked right before your eyes in the open kitchen. There is also a signature dish that is worth tasting. It is the Kabardian smoked cheese that adds some exotics to classical Italian cuisine. At the gastro boutique inside the restaurant, one can buy fresh vegetables and all kinds of Italian products. There is one more thing that makes the place stand out among other restaurants. This is an underground parking lot where the owners of eco-friendly electric vehicles can charge their cars for a nominal fee.

Oysters are one of the most delicious seafood dishes. Oysters can be cooked in a variety of ways. They may be smoked, boiled, steamed, pan fried, grilled, or baked. The unique flavor of an oyster, which may be salty, sweet, buttery, copper, briny, or melon, heavily depends on where it was caught.

Average bill: 1,000 – 1,500 rubles

If you happen to walk along Rozhdestvensky Boulevard, the best choice for dinner is Roberto Restaurant. This is a small but very cozy place, which was named after its first Italian chef. The place has always been very popular, both among locals and tourists. Italian celebrities visited the place more than once. Among them were actor Michele Placido, football player and coach Nevio Scala, and musician Marco Armani. In 2004, the trattoria became one of two Moscow restaurants to be awarded a certificate confirming the authenticity of Italian cuisine outside the Apennine Peninsula. The menu includes traditional Italian hits, dishes from local, seasonal products, and signature delicacies such as beef fillet with black truffle sauce. Sea urchins, oysters , and crabs can be ordered straight from the aquarium. The bar offers a good list of elite wines from all Italian regions. Visitors with children will appreciate a special menu for kids.

Photo from Yandex

Antipasto is a traditional Italian snack (the word “antipasto” literally means “before meals”). It may be hot or cold and it may contain cold cuts, seafood, cheeses, and vegetables.

Average bill: 530 – 1,300 rubles

Accenti is located in a detached building in a quiet Moscow courtyard. People come here to enjoy authentic Italian cuisine and relax from the hustle and bustle of the big city. The interiors are decorated with green plants and flowers, paintings, classical chandeliers, and plaster figures. An old carved fireplace and candlesticks, as well as designer wallpapers depicting sunny landscapes, create an authentic Italian atmosphere. Visitors will enjoy a good choice of antipasti , pizzas, pastas, and desserts. Pizza is cooked according to the old Neapolitan recipes in a wood-burning oven. Pasta fans are offered spaghetti, tagliatelle, and ravioli made of selected durum wheat. Exclusive delicacies, such as squid tentacles in a Ligurian style, duck breast with caramelized oranges, and fried duck liver with porcini mushroom sauce, are served for hot meals. The basement houses a cozy wine loft with a decorative fireplace, an old Ed. Seiler piano, and racks with a rich collection of wines.

Photo from Restaurant Guru

It's a very tasty Italian dessert with the texture of frozen mousse. Semifreddo means 'half cold' and it is made of sugar, egg yolks and whipped cream. This dish is usually served in the form of tarts or ice cream cakes.

Average bill: 7,000 – 7,500 rubles

Semifreddo is not only a popular Italian dessert but also a luxury restaurant in Moscow, not far from Park Kultury Metro Station. This is the brainchild of the famous Sicilian chef Nino Graziano, whose restaurant in Sicily was awarded 2 Michelin stars. The Moscow restaurant is in no way inferior. It is a mixture of modern and classical approaches to fine dining culture. The menu offers traditional Italian and Sicilian cuisine, creative recipes by Nino Graziano, signature dishes from other chefs, and the Semiramis menu. True gourmands will enjoy an exclusive set of dishes with Alba white truffle and black caviar. Whatever you choose — classical minestrone, duck foie gras escalope with marsala sauce, or gourmet semifreddo “Roshe” — everything will be worthy of the honorary title of haute cuisine. The wine list is just like the cuisine: refined and balanced. Due to such outstanding qualities, the restaurant was highly rated by many prestigious guides, including the guides of Michelin, Gault& Millau, and Gambero Rosso.

Photo from Restaurant Guru

It's a classic Italian pasta made of spaghetti or other long pasta, guanciale or pancetta, parmesan, olive oil, salt and pepper. Carbonara means 'in the manner of coal miners'. There are different theories for its origin. The dish could be the main meal for charcoal workers or just the black pepper flecks look like coal dust against the creamy pasta.

Average bill: 1,000 – 2,000 rubles

Amarena is an Italian restaurant of the Albero Group that promotes the concept of family dining. Its cuisine is in the hands of Maurizio Romagnoli, a hereditary chef from Italy. So, every dish is simultaneously traditional and unique here. Carbonara  is prepared the way it is done in Italy — without adding any cream, and pizza is made on the thinnest dough. Special attention should be paid to black ravioli with salmon and dried tomato cream, tomato soup with stracciatella, and truffle pasta cooked in a Parmesan cheese head. The interior of Amarena is very democratic and light. It has panoramic windows overlooking the courtyard and the open kitchen, which visually expands the space. The restaurant is open 24 hours a day, so one can have freshly brewed coffee even at night.

Photo from Restaurant Guru

Pappardelle is one of the widest types of flat egg paste. The name of this noodle comes from the verb "pappare", which in Tuscan dialect means "to eat with pleasure and joy." The width of fresh pappardelle can reach 3 cm, dry ones are narrower - 1.3-1.5 cm. Homemade pappardelle is not difficult to prepare, but they turn out to be incredibly tasty and aromatic.

Average bill: 1,700 – 3,200 rubles

La Provincia is a cozy corner of Italy not far from the legendary Gorky Park. Here, the chef from Southern Italy will offer you traditional Italian dishes. Pappardelle with truffle, foie gras with quail and saffron pear, and risotto with cuttlefish ink are just a few of the restaurant's signature dishes that are worth tasting. There is also a good choice of seafood: oysters, grilled octopus, Kamchatka crab with spicy herbs, scallops in the shell, sea urchins, squids, and cuttlefish. The interior looks very elegant with crystal chandeliers, white tablecloths, Venetian chairs, candlesticks, and mirrors in solid frames. But despite all this luxury, it turns out to be a democratic restaurant with a homely atmosphere and fair prices.

Photo from Google

It's traditional Italian flat oven-baked bread that is cooked in flat sheet pans, flavoured with olive oil and rosemary and topped with herbs and vegetables. Focaccia is regarded as a pizza's precursor. It derives from the Latin word 'focacia' which means 'hearth' or 'fireside'.

Average bill: 800 – 1,200 rubles

Farro is a modern gastro bar located in the historical part of Moscow, halfway between Kitay Gorod and Chistye Prudy. As you can judge from the name, the menu is focused on homemade pasta for every taste. But the restaurant can also boast of its pizza Romana, a variety of focaccias and light snacks, and an extensive wine list. The cocktail collection will impress you with its signature variants inspired by famous painters. Order "Gustav Klimt" to feel the taste of baked-pear brandy ennobled by the flavors of grape and jasmine. And "Frida Kahlo" will let you discover the taste of pink-pepper tequila mixed with passion fruit, blue agave, and lime. The interior of Farro Pasta Bar is also a kind of artwork. It is very atmospheric: designer plafonds, unpainted walls, wooden tables... And its floor-to-ceiling panoramic windows allow one to enjoy the rhythm of Moscow life.

Just make a choice and enjoy a wonderful evening in a warm Italian atmosphere. Pizza Romana, Risotto alla Milanese, Sicilian shrimp, and many other Italian delicacies are waiting for you in Moscow. Buon Appetito!

Of course, there are still many elegant and family friendly restaurants for those who prefer a quieter evening. With such a large selection available, Elite Traveler has compiled a suitable list for diners of all persuasions.

Café Pushkin

Designed to recreate the feel of a 19th century aristocrat’s house, Café Pushkin has become one of the most popular restaurants in Moscow, thanks to the quality of its food, impeccable service and the excellent vodka selection. The atmosphere of pre-Revolution Russia is delightfully charming, from the flowery script of the menu to aristocratic country house décor. Pushkin is the ideal destination if you want to be treated like Russian nobility and dine like a Tsar – but book ahead, the restaurant’s popularity requires reservation well in advance.

Lavishly decked out with chandeliers and hand-painted furniture, the menu selection may come as a surprise to first-time guests, with options ranging from Pi Pa duck with melon and truffle to beefsteak with foie gras. Turandot puts a French spin on pan-Asian cuisine, and does so with incredible style and boldness. Whilst the interior décor is certainly to be marvelled at, it is the thoughtfully conceptualized and perfectly executed menu options that make for an incredible dining experience.

The interior at Piccolino, one of the best Italian restaurants in Moscow

Italian for ‘small’, Piccolino is a cozy, homely restaurant – something of a rarity in Moscow.

Serving typical Italian food, the family friendly establishment is laid back, but this doesn’t compromise the quality of the food: good, hearty portions that are exceptionally tasty. The interior of Piccolino has been designed to replicate that of a large country house, and the décor is entirely fitting with the atmosphere of the restaurant. In a city where many of the establishments value the names of their guests over the quality of their dishes, Piccolino is the place to come if your preference is quality of food rather than famous faces.

Twin Gardens

With two tasting menus and an à la carte option, the Twin Gardens at the heart of Moscow caters to any palette. With the restaurant concept based on the symbiosis of science and nature, their Vegetables set menu explores all manner of produce from seedling to peeling, delicately plated in a tasteful homage to the natural life cycle of wild plants and flowers. For more adventurous types, their Rediscover Russia menu offers a culinary tour of various local specialties found in provinces across the vast continent. They also have a wide selection of Russian wines.

OAK HALL, CDL

Located in an elegant 19th century mansion, CDL is one of the most sophisticated restaurants in Moscow.

The interior has been gorgeously designed to recreate the grandeur of the Silver Age of Russian culture, with antique balustrades and bas-reliefs throughout the Oak Hall main room. The staircase in the Oak Hall is a particular masterpiece; it was built without a single nail or screw. The fireplace is equally impressive and has been used as a meeting room by President Dmitry Medvedev. Guests can also hire additional rooms such as the Cigar Room and the Cabinet Room. A menu of authentic Russian cuisine has been created by top chef Alexander Popov, with organic dishes bursting with flavor and a splendor to match the opulent surroundings. With so much luxury and class on display, it’s little wonder that former US Presidents Ronald Reagan and George Bush have chosen to dine here. Situated in the center of the city between Bolshaya Nikitskaya 53 and Povarskaya Ulitsa 50, it’s worth booking ahead to avoid disappointment.

White Rabbit

With a domed window inviting soaring views of the Moscow cityscape, White Rabbit has recently undergone extensive renovations, to both its interior and its menu. Renowned architect Natalia Belonogova has transformed the restaurant into an airy, modern space, perfected by the addition of a summer veranda. To connect the dining options with the new interior, head chef Vladimir Mukhin has created a new menu, Metamorphoses, to reflect the lifecycle of the mayfly butterfly.

Delight your palette with scallop, strawberries and blackcurrant or, for dessert, dandelion honey with melted cottage cheese. This summerlike and refreshing menu has its roots in Russian soil and its head in the clouds above Moscow’s skyline.
