Ingredients

Cupcakes and frosting.

  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix or 1 box Betty Crocker™ Super Moist™ Devil's Food Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1 1/4 cups from 1 tub (16 oz) Betty Crocker™ Rich & Creamy Chocolate Frosting
  • Black food color
  • 2 1/2 cups from 2 tubs (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
  • Yellow and red food color

Lion Decorations

  • 1 1/2 cups caramel popcorn
  • 12 brown miniature candy-coated chocolate baking bits
  • 12 pretzel sticks
  • 12 pieces Cheerios™ cereal (any flavor)

Tiger Decorations

  • 12 orange chewy fruit-flavored gumdrops (not sugar coated), cut in half crosswise, top halves discarded

Monkey Decorations

  • 6 miniature marshmallows, cut in half crosswise, pieces flattened
  • 12 small round chocolate-covered creamy mints

Zebra Decorations

  • 6 round vanilla wafer cookies
  • 24 brown miniature candy-coated chocolate baking bits
  • 6 black chewy licorice-flavored gumdrops (not sugar coated), cut in half vertically

  • 1 Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups. Make and bake cake mix as directed on box for 24 cupcakes. Cool in pans 10 minutes; remove from pans to cooling rack. Cool completely, about 30 minutes. Decorate cupcakes to make 6 lions, 6 tigers, 6 monkeys and 6 zebras.
  • 2 In small bowl, mix 1/2 cup chocolate frosting with black food color to make black frosting. Place in resealable plastic freezer bag; cut small tip off 1 corner of bag. Use black frosting to decorate lions, tigers, monkeys and zebras (steps 3 through 7).
  • 3 Lions and Tigers: In medium bowl, mix 1 cup vanilla frosting with enough yellow and red food colors to make orange. In small bowl, mix 1 tablespoon orange frosting with 3 tablespoons white vanilla frosting to make lighter orange for muzzles. Frost 12 cupcakes with darker orange frosting. For muzzle, spread or pipe small circle of lighter orange frosting on each cupcake.
  • 4 For lions, place caramel corn around edges of cupcakes for mane. For eyes, add brown baking bits. For whiskers, break about 1/2-inch pieces off each end of pretzel sticks and insert in cupcakes. For ears, add cereal pieces. Using black frosting, pipe on mouth and nose.
  • 5 For tigers, use black frosting to pipe on stripes, nose and mouth. For eyes, add brown baking bits. For ears, add gumdrop halves.
  • 6 Monkeys: Frost 6 cupcakes with chocolate frosting. In small bowl, mix 1 tablespoon chocolate frosting and 2 tablespoons vanilla frosting to make light brown. For muzzle, spread or pipe circle of light brown on each cupcake that starts in middle and extends to edge; pipe small tuft of hair on opposite edge. For each eye, attach brown baking bit to marshmallow half with frosting; place on cupcakes. With black frosting, pipe on nose and mouth. For ears, add mints.
  • 7 Zebras: Cut small horizontal slit in top of 6 cupcakes near edge of paper cup. Insert edge of vanilla wafer cookie into each slit to create elongated face, adding small amount of vanilla frosting to cookie before inserting to help stick. Frost cupcakes with vanilla frosting. For muzzles, frost cookies with black frosting. With black frosting, pipe on stripes and mane. Add brown baking bits for nostrils and eyes. For ears, add black gumdrop halves, cut sides down.

Introduction: Jungle Animal Cupcakes

Jungle Animal Cupcakes

Cake (cupcake) decorating can be so expensive and overwhelming at first.  Here I show you some of my techniques for making beautifully decorated and professional looking cupcakes that won't break the bank and that anybody can do.  These cupcakes have a plain vanilla base, simple butter creme frosting, and are decorated with  homemade fondant jungle animals that taste delicious. This is not your typical flavorless and hard fondant, the homemade marshmallow fondant is delicious and creates toppers that any kid, or adult, would love to eat.

Step 1: Baking the Cake

This instructable focuses on a method for decorating cupcakes, the combination of flavors are endless and completely up to you.  I enjoy a simple vanilla cupcake with traditional butter creme frosting to showcase the fondant sculptures on top of each.  Bake the cake: Purchase your favorite boxed cake mix (even the off brands work great, they are all the same basic ingredients) and prepare it following the instructions on the box.  Make sure to use room temperature eggs so that your cupcakes bake up light and fluffy.  Using boxed cake mix is not cheating (These will still be homemade), I believe it is a simple way to make sure the cupcake tastes great and proportions of sugar, flour, baking powder, etc are correct.  I've experimented with many different homemade batter recipes and I've found that its not the base cake that makes the dessert special, but rather it is the optional fillings and toppings that make the cupcake special.  Pour your cupcakes into cupcake pans that have been lined with cupcake papers.  I like to use solid aluminum wrappers because they are typically the least expensive and (typically 79 cents for 50-75!) will not distract from the sculpted piece or decoration that you top the cupcake with.  Designer cupcake papers are overrated and way too pricey! Do not under bake the cupcakes! Many inexperienced bakers often worry about over baking the cupcakes so they end up taking them out too early only to find a sticky mess.  Test the cupcakes with a toothpick or by pressing the top with your finger to see if they spring back.  Let the cupcakes cool in the pan for 2 minutes then flip them out onto a cooling rack to completely cool before frosting.

Yum, nothing is better than a classic butter creme frosting. Here is my basic recipe. 1 cup unsalted butter (two sticks) 3-4 cups confectioners sugar (sifted) 1 tablespoon pure vanilla extract (the real stuff!) 3-4 tablespoons water or milk. pinch of salt In a mixer creme the butter for about 2 minutes until light and fluffy. Slowly add in the sugar 1 cup at a time until it is incorporated into the butter.  Add in the salt, vanilla, and water/milk and whip until light and fluffy (5-10 minutes).  Add in your favorite food coloring.  I use gel coloring which can be found at almost any grocery, craft, or specialty store.  The food gel colors will not alter the consistency of your frosting and are very inexpensive. If you choose to use traditional water based food coloring just decrease the amount of liquid you add to the frosting initially so that it doesn't turn out runny.

Step 4: Make Your Own Homemade Fondant

Make Your Own Homemade Fondant

Purchasing fondant at the store is convenient, however it is not cheap.  Here I show you how to make your own homemade fondant for about $3.00.  This fondant is not only less expensive but it tastes great and the ingredients can be found at almost any convenience store. Ingredients. 16 oz bag of marshmallows ($0.99) 2 pound bag of confectioners sugar ($1.99) 2 tablespoons of water (free!) 1 teaspoon of your favorite flavoring (clear to make white fondant) (optional) Microwave the marshmallows and water in a glass bowl stirring every 15-30 seconds.  Microwave until the mixture becomes smooth and is completely melted.  Add in half of the powdered sugar and mix to combine.  Mound the remaining sugar onto a clean kitchen counter top and dump the mixture into the center.  Making sure your hands and fondant is covered in sugar, knead the mixture to incorporate the sugar.  Add in your favorite flavoring and knead to incorporate. Cover the fondant at all times when not in use to prevent it from drying out.  Take out small portions at a time and recover the remaining fondant. COLORING THE FONDANT: To color the fondant simply add a few drops of your preferred color and knead to combine.  If you are afraid of staining your hands you can wear food safe rubber/ latex gloves.  Do not use water based food dye as this will alter the consistency of the fondant, gel coloring is a very inexpensive option.  If you have any kool-aid packets lying around, these may also be used to color the fondant.

Step 5: Sculpting and Painting the Animals.

Sculpting the animals is easier than it may look.  These figures are very basic shapes with exaggerated characteristics to make them stand out and identify each animal.  Roll Small pieces of fondant to create the body and form into a teardrop shape. The arms and legs use a similar tear drop shape and the head is a round ball.  Mold ears, noses, etc depending on the animal and attach using a small amount of water as the glue (if necessary).  Once sculpted let your fondant sculptures dry to firm up a bit before painting. Use gel food coloring and a paintbrush to detail the characters with stripes, eyes, etc.  Let dry before topping the cupcakes. Paint sticks better if the sculptures have had some time to dry.  I suggest waiting a few days to let them set before applying the paint, though this is not completely necessary. Use your imagination and create any animal/ creature/ design you wish. Post your creations to share your work!

After the figures have dried you can set them into the cupcakes you have baked and frosted.  It is ideal to bake the cupcakes after the figures are made and dried so I typically recommend making the figures a week in advance. Arrange the cupcakes on a platter and make sure to mix up the animals so that like colors are not next to each other.  Take a photo of your masterpiece and dig in!

Surprise Inside Safari Cupcakes

I’m obsessed with surprises. There’s nothing like putting a smile on someone’s face because you gave them a surprise that they truly didn’t expect. I also love throwing in that element of surprise when I bake. On the outside, these may seem like ordinary safari cupcakes, but there is an animal print surprise on the inside! These Surprise Inside Safari Cupcakes are guaranteed to be a hit at a kids (or adult!) party! If you love safari animals, check out my Zebra Cake .

Something that really adds a nice touch to these cupcakes are these cupcake wrapper templates. You can print those out here . I’d print them on card stock and put them on at end after the cupcakes are baked.

Instructions:

  • Preheat a moderate oven (175°C/350°F)
  • Make your vanilla cake mix per the packaging instructions.
  • Place two spoonfuls of vanilla cake mix into a small bowl, and add 4 spoonfuls of cake mix into another small bowl.
  • Add black food colouring to that vanilla cake mix well.
  • Place half of your remaining vanilla cake mix to a snap seal bag. Also add your entire brown cake mix into a snap seal bag, and your entire black cake mix into a snap seal bag.
  • Line your cupcake tray with cupcake liners.
  • Cut a fine large tip from your snap seal bag with vanilla cake mix. Pipe about ⅓ of your cupcake liners with vanilla cake mix into 6 of your cupcake liners.
  • With the black cake mix, pipe another layer directly over the brown cake layer design.
  • Pipe your vanilla cake mix with a swirl starting in the center and moving outwards.
  • Repeat the process of creating the bullseye in each of the cupcakes with a black, brown, black bullseye pattern. Then add another vanilla cake layer. Make sure this doesn’t fill over ⅔ of the cake.
  • Add your remaining brown cake mix and add it into your white cake mix. Add orange food colouring and mix well.
  • Spoon a layer of orange cake mix to the bottom of the remaining 6 cupcake liners.
  • Bake in a moderate oven for about 12 minutes.
  • Use a pastry brush to paint orange spots on an unmelted white candy melt. Draw a black ring around the orange. Draw black tiger stripes on unmelted orange candy melts.
  • Wrap your printed animal print card cupcake wrappers, and wrap them around the bottom of the base of your cupcake. Tape where the 2 edges meet.

These safari Minnie cupcakes are perfect for Disney fans whether you’re setting up a Jungle Cruise movie night, a safari party, or just because you want to have a bit of fun in the kitchen. And best of all – they’re pretty simple to make.

Jungle Cruise Cupcake Idea

Earlier this year, I shared the ‘not so girly’ version of these Jungle Cruise cupcakes for a fun reminder of one of my daughter’s favorite rides at the park. She giggles, jumps, gasps, and screams with delight every time we ride it.

If you haven’t seen it, the movie was absolutely hilarious and has become one of our favorites to watch during family movie nights. These colorful cupcakes are perfect for a movie night because they only require a cake and frosting.

Fun Ways To Share These Jungle Minnie Mouse Cupcakes

  • Birthday Party Cupcakes – These would be super cute for a jungle or safari-themed birthday party. I found a ton of sets for the theme on Amazon: this is the one I bought for our party and I combined it with these fun leaf plates for the Jungle Cruise snack mix and a few other treats.
  • Jungle Cruise Movie Night – Cupcakes are the ultimate treat for snuggling up and watching movies at home (and they can be made ahead of time, so that’s awesome). I used the garland and a few balloons left over from the kit I mentioned above for an easy decoration.
  • Drop Off a Sweet Treat – I have these cupcake boxes on hand and combine them with stickers to drop off a treat for my daughter’s friends or when someone can’t make a party.
  • Bring Them as a Class Party or Booster – You would literally blow everyone’s minds if you make these for a bake sale or party! Just a tip: if you’re putting these into a traditional cupcake carrier, turn them perpendicular every other cake so they will fit without touching.

How to Store Cupcakes to Keep Them Fresh? What About Fondant and Frosting?

The key to keeping these cute Minnie cupcakes moist and delicious is to store them in an airtight container and keep them at room temperature. You don't have to store them in the fridge and can prepare them a day in advance of the party or event.

If you want to pre-bake the cupcakes, they can be stored in the freezer for a couple of months. Thaw them at room temperature. Additionally, you can make the frosting one week in advance or freeze and store for a couple of months. Bring to room temperature and beat with the mixer to fluff.

To make the cheetah spot Minnie or Mickey ears ahead of time, let them dry completely and use high quality edible ink markers. Wrap them in cling wrap and store them in an air tight container out of direct sunlight. Make sure they're not stacked on top of each other. You can make these up to a month ahead of the party.

Safari Minnie Mouse Ear Cupcakes

These safari Minnie cupcakes are a fun and super cute treat for a Jungle Cruise movie night, bake sale or booster fundraiser, or as a safari party treat.

Ingredients

Fondant bow ingredients:.

  • 1 package of White Fondant
  • 1 Black edible marker 
  • 1 Brown edible marker
  • 1 Cheetah cookie stencil
  • 1 Stripe cookie stencil
  • 1 fondant cutter (round and 2 inches in size)
  • 1 can of red cake spray 
  • 1 can of silver cake spray 

Chocolate Cupcake Ingredients

  • 1 box of chocolate cake mix
  • 1 ¼ cup of milk
  • 1/2 cup of butter, unsalted

Vanilla and peanut butter frosting ingredients

  • 1 cup of soft butter, unsalted
  • 3 cups of powdered sugar
  • 2 tsp of vanilla extract
  • 3-5 T of heavy whipping cream
  • 3 cups of toasted coconut
  • 1/4 cup of creamy peanut butter
  • 1 large piping bag with star tip

Instructions

Minnie mouse fondant ears.

  • Add cornstarch to a cutting board and knead the white fondant. It must become soft and workable.
  • Add a bit more cornstarch onto the cutting table if needed and roll out the fondant to 1/4 inch thick.
  • Use the fondant cutter and cut out 40 circles.
  • Put them onto a cookie sheet and leave them to dry.

The Next Day:

  • Use the black edible marker and cheetah stencil set on top of one of the white circle fondant pieces. Trace the cheetah spots and set each disc aside. Repeat with all of the fondant circles.
  • Use the brown marker and trace around the black lines.
  • Spray the top of the circles with silver spray to make them shiny and let them dry for a few hours.

How to Make a Minnie Mouse Bow:

  • Pinch off 1 tablespoon of the white fondant. Press it into the larger bow mold then place it on the cookie sheet to let each dry.
  • After it has dried, put the stripe stencil on the bowl and spray the bow with the red cake spray. Let dry completely.

To Make the Cupcakes:

  • Preheat the oven to 350 degrees and line the pan with cupcake liners.
  • Beat milk, butter, eggs, and cake mix together in a large bowl.
  • Fill the cupcake liners about 3/4 full and put them in the oven to bake for 21 minutes. Remove and let cool completely.

Make Frosting and Assemble Cupcakes:

  • Mix butter, powdered sugar, vanilla, and whipping cream with a mixer. It should be smooth and stiff when done.
  • Use an ice cream scooper and scoop the frosting on top of the cooled cupcakes. Use a butter knife to spread out the frosting.
  • Roll the cupcake into the toasted coconut and set aside. Repeat with all cupcakes.
  • Add peanut butter to the rest of the frosting and put that mixture into a piping bag. Add a dollop of it onto the middle of each cupcake.
  • Put the bow in the middle and one ear to the left and right of the bow.

To turn this fun safari ear idea into a full-size cake, make the fondant circles larger and cut 4 of them. Place a skewer on a fondant disc, add water to secure, and layer the other disc on top. Let dry completely before decorating with cheetah spots.

Safari Party Theme Leopard Print Cupcakes

A Safari party theme needs a fabulous treat! How about some delicious spotted leopard print cupcakes!? I served these for our “Into the WILD” New years Party and they were so fun! I know, you're looking at these thinking, “I don't have time to make fancy cupcakes”.

But guess what? YOU DO. These are deceptively easy. They take just a little extra time to put the batter in the tins but that's it. If I can do it, I promise, you can too.

Safari Party Cupcake Ingredients

  • Yellow or white cake mix made according to box
  • Cocoa powder – dutch processed recommended
  • 1/2 capsule activated charcoal or Black food coloring gel
  • Baking Cups or Muffin tins with cupcake liners
  • Plastic piping bags

Mixing Up Batter Colors

After you mix your cake batter scoop 2 cups light cake mix in a separate bowl. Add 3 tsp cocoa powder, dutch processed cocoa is more red in color and will give you the results seen here. This color is the for the main spot. Adjust quantity of cocoa as desired being careful to not get too dark.

Next scoop 3/4 cup of cocoa tinted batter into a separate bowl and stir in 1/2 capsule of activated charcoal , or a toothpick dip of black food coloring gel and mix well. You want this color, the spot outline, to be almost black.

Now let's get down to the business of creating these fun little leopard print cupcakes! Fill the bottom of each liner with a few spoonfuls of yellow cake batter. You will be doing THREE layers and don't want to overfill so start off with small amounts.

Fill one piping bag with the light chocolate batter and another with the black/brown batter. Snip the end off the light chocolate bag, twist the top to prevent leakage and squeeze dots onto the yellow cake batter layer. 3 larger dots are better than the 4 smaller ones from my first batch.

Then snip the black chocolate piping bag and draw a “C” shape outline on the sides of each light chocolate spot. Your spots are now complete.

Repeat Two More Times

Now that your first layer is done and spotted, you're ready to try it again. And then again. After that 3rd layer has spots, you're ready to go in the oven.

You can use either baking Cups or cupcake liners in a tin but I wanted to show how fun and easy the baking cups are. They really make baked goods look SO much more professional.

Pro Tip : Do you see how full these baking cups are? They totally overflowed! Make sure to keep liners about 2/3 full to allow for rising of the cake. Luckily these were my test cupcakes and I learned my lesson real quick!

Pro Tip #2 : When making party food, it's a really good idea to have a small test batch! Just in case!

I think these are gorgeous without frosting and a simple New Years party pick.

The baking cups don't fade as the cupcake cooks and are ready to place on the party food table as soon as they come out of the oven! Grease spots no more!

BUT if you have kiddos like mine that prefer their cupcakes with frosting you can use our easy chocolate buttercream recipe as well. After making frosting, add to another piping bag and snip a large hole for easier, more uniform frosting.

Safari Cupcakes for RSPCA Cupcake Day!

"Oh look at that cat!" I said to my sister one day. We were outside in our front garden and I was about seven and she was six years old and as owners of goldfish, we desperately wanted a cat or dog.

Ignoring any superstitions that black cats should never cross our paths we cajoled him towards us.

"Heeere kitty kitty..." we beckoned, our fingers curling over.

Miraculously, he moved towards us with the confidence and sway of a catwalk model. I pulled off a corner of the sandwich I was eating and placed it in my palm. He ate it off my hand. It tickled unexpectedly and for the first time I felt how sandpapery a cat's tongue was. I pulled off more and he ate more until my sandwich was gone. We played with him for a few hours until my mother called the familiar dinner time call of "Makaaaaan!"

"Mummy, a cat wants to stay for dinner!" we called to my mother. "He's hungry" we pleaded.

"Don't be silly" she said and ushered us inside for dinner. Halfway during dinner we heard a plaintive meow coming from the other side of the screen door. His eyes glowed green and he sat there meowing loudly and insistently. Still, he was not allowed inside and as soon as we finished eating, we ran outside and played with him until it was time for bed.

The next day he was back. Curious at this startlingly beautiful and well groomed itinerant, I looked at his collar. "His name is Sabu and there's a phone number for him" I told my mother and sister. He surely wove his way into our lives -being undeniably social, gracious and beautiful, he walked into our house as if it were his and purred, ate and slept inside. That day, my mother rang the number on Sabu's collar and there was no answer. She tried again every day at different times -this was before the age of answering machines- and it would always ring out. My sister and I were excited. We finally had a cat! A beautiful long necked pure black cat with glowing green eyes called Sabu. "Maybe the owners have gone away and left him behind!" we said excitedly.

He stayed with us for three and a half weeks. Until one day my mother rang that number and someone picked up the phone. It was Sabu's owner. He had been away and was immensely relieved to hear that Sabu was ok as he had been away on holidays and the person that was supposed to feed Sabu had neglected to do so on a regular basis. He came by to pick him up the next day and we stroked Sabu for the last time.

We got our first cat quite a few years later and he wasn't as sweet natured as Sabu-actually he was so curmudgeonly and angry and scratched our arms and hands to pieces every single day until we got another cat Otto who was the apple of my eye. I still occasionally think of Sabu. I recently went on a game drive in South Africa and came across one of Sabu's distant relatives, a lion. Coincidentally, Julie from Gourmet Getaways posted about a cupcake making class at Stormie D's in Albury and when I saw the lion and monkey I immediately thought of the RSPCA cupcake day (http://www.rspcacupcakeday.com.au/).

I wanted to do make these cupcakes a little different and instead of making a cake cupcake, I decided to make it a pudding cupcake. That is, a sweet, syrupy moist cupcake called malva pudding which is drenched in a baked-in buttery, sweet vanilla syrup. The recipe was adapted from the Oprah site which I have used in the past many a time. An Afrikaner dessert named after Malvasia wine which it is typically served with, it is a fantastically spongey, moist pudding served warm from the oven. If you are a fan of sticky date pudding this is the pudding for you. What makes this lovely is the syrup that you pour into the cake after you've partially cooked it in the oven and poked it all over with holes. The pudding acts as a sponge holding in the vanilla infused syrup and when you take a bite into the pudding, the sweetness spreads through every bite.

Mr NQN has a dozen of these lions and monkeys to take to work  to raise funds for the RSPCA Cupcake Day. The cupcakes will stay moist although I do challenge anyone to resist the smell and taste of one straight from the oven. In fact, I may have had to have baked a second lot because some seem to have disappeared somewhere....

For malva cupcakes

Makes a dozen cupcakes

1  cup caster or superfine sugar

2 large eggs, at room temperature

1.5 tablespoons apricot jam

1 1/4 cup plain all purpose flour

1 teaspoon bicarbonate of soda

1 teaspoon baking powder

1/2 cup milk

1.5 tablespoons butter, melted

1 teaspoon vinegar

3/4 cup pure cream

115g/1 stick butter

3/4 cup white sugar

1/3 cup water

1 tablespoon vanilla extract (be generous with the vanilla, it will pay dividends ;) )

Step 1 - Line a cupcake tray with 12 liners and preheat oven to 180c/350F. In a small food processor, blend the sugar and eggs until pale lemon in colour-it doesn't take long. Then add the apricot jam and process until large lumps are removed. Place in a medium sized mixing bowl.

Step 2 - In another bowl, measure the flour, bicarbonate of soda and baking powder. In a separate jug, measure the milk, butter and vinegar. Alternating, add the flour mixture to the egg mixture following by the milk mixture until combined and there are no lumps. Pour into a jug and using a spoon to stop the batter, gently pour this into the cupcake liners and bake for 15 minutes.

Step 3 - Meanwhile, and get the syrup going so that it is ready for the next step. In a small saucepan, place the cream, butter, sugar, water and vanilla  and melt and bring to a simmer for a few minutes and then remove from the heat. Pour into a jug to make the next step easier.

Step 4 - Take a skewer and insert it into the cupcake, you don't want the batter runny and you want it to be baked. Once it is, quickly poke holes into the cake with a chopstick-something thicker than the skewer ideally or even use a fork (just make sure not to poke through the bottom of the cupcake liner). Pour the syrup into the cake into the holes-you'll be surprised how much it soaks up, especially as the cakes are warm. Then return the cupcakes to the oven and bake for 5-8 minutes. Try and resist eating one straight from the oven ;)

Making the monkeys

You will need:

1x heart cutter

2 x round cutters, one large enough to cover the top of the cupcake and then one slightly smaller

1 small round cutter for ears

Brown fondant and light tan fondant

sharp paring knife

non stick rolling pin and mat

Brown icing pen or brown fondant

White fondant for eyes

Step 1 - Roll out the brown fondant and cut out circles using the larger round cutter and place on the cupcake. With the smallest round cutter cut out a pair of ears for each monkey face. Affix these to the larger monkey face using a little water.

Step 2 - Roll out the light tan fondant and cut out a heart and a circle using the medium sized round cutter. The top of the heart is for the eyes so trim the rest of the heart so that it fits snugly against the round (as shown). Adhere these to the brown face with a little water.

Step 3 - Roll little balls of white fondant for the eyes and stick these on with a tiny bit of water. Then using brown fondant or a brown icing pen, draw the eyes, nose and mouth.

A round cutter slightly smaller than the cupcake circumference

White fondant

Small round cutter (about an inch in diameter at the most)

Step 1 - Roll out the orange fondant to about 20cms/8 inches and then using the knife, cut out long strips about 1 inch in thickness. Cut out triangles from the sides to form a mane. Carefully lift it around the cupcake joining it up at both ends.

Step 2 - If the cupcake has any depressions, make a small mound using apricot jam. Then, roll out the yellow fondant and cut out circles using the round cutter and place on top of the mound sealing in the sides of the yellow to the orange mane.

Step 3 - Make two tone ears using the orange and yellow fondant by cutting triangles and adhering these to the cupcake. Roll out the white fondant and cut out round using the smallest round cutter. Place on the lion's face at the bottom of the face using a little water.

Step 4 - Roll little balls of white fondant for the eyes and stick these on with a tiny bit of water. Then using brown fondant or a brown icing pen, draw the eyes, nose and mouth. Using the tip of the paring knife, poke small holes around the mouth of the lion.

The sponge is a mix of vanilla and chocolate which is then topped with a caramel chocolate buttercream and a very generous caramel drizzle as a finishing touch.

HOW TO MAKE THE SAFARI PRINT SPONGE

Cupcakes like these can often look intimidating but once you know the steps you realise they are so easy to replicate. Follow the steps below and pretty soon you’ll be making everything Safari Print.

See these step by step instructions with images but make sure you read the recipe card below for the full ingredients list & instructions!

Colour your batter x3 . Once you’ve created your vanilla cupcake batter, the first step is to divide it into three bowls. Divide the batter so you have the half the mixture of vanilla and then the remaining half split into two which are coloured with cocoa powder into two different chocolate tones; light and very dark.

Pipe on the pattern . Fill three piping bags with the batter and cut small holes out the end of the two chocolate toned bags. Pipe two or three “C” shapes using the darker chocolate batter then fill the centre of the “C” with the lighter chocolate batter.

Cover with the plain batter . Pipe the plain vanilla batter on top carefully so you don’t disturb the pattern below.

Repeat the pattern . On top of the piped vanilla batter, repeat the chocolate pattern, being mindful that you have plenty of vanilla batter showing as the pattern does spread when baked.

Bake the cupcakes . Bake the cupcakes for 20 minutes until golden then leave on a wire rack to cool.

Decorate with a chocolate caramel buttercream . Top the cupcakes with a chocolate buttercream and finish with a drizzle of caramel.

Ingredients

For the safar print cupcakes.

  • 150 g butter softened
  • 150 g golden caster sugar
  • 3 eggs large
  • 1 tsp vanilla extract
  • 150 g self-raising flour
  • 3 tbsp coco powder
  • 2 tbsp milk

For the chocolate caramel buttercream

  • 250 g icing sugar
  • 50 g cocoa powder
  • caramel to drizzle

Instructions

For the safari print cupcakes.

  • Line a cupcake tin with 12 cupcake cases and preheat your oven to 160°C
  • Cream the butter and sugar into a large bowl until light and fluffy
  • Add the eggs, vanilla and flour all at once and beat it in until just combined then add a splash of milk to loosen the mixture a little
  • Split the mixture between three bowls leaving one plain vanilla, adding one tbsp of cocoa powder to another and two tbsp cocoa powder to the final. Mix the cocoa powder in so you have three tones. Plain vanilla, light chocolate and dark chocolate .
  • Scoop the batter into individual piping bags and snip the ends off then begin piping the safari pattern by piping two or three "C" shapes using the darker chocolate batter then fill the centre of the "C" with the lighter chocolate batter. 
  • Pipe the plain vanilla batter on top carefully so you don't disturb the pattern below, then repeat the C shapes again on top.
  • Bake for 18-20 minutes until golden and springy then leave them to cool in the tins for 10 minutes, the remove and leave on a wire rack until completely cooled.

For the Chocolate Caramel Buttercream

  • Cream the butter in a large bowl until light and fluffy
  • Add the icing sugar a tablespoon at a time and beat it into the butter until well combined then add the cocoa powder and mix it through until smooth and creamy

To decorate

  • Fill a piping bag with a open star nozzle and fill the it with the Chocolate buttercream. Pipe tall swirls of the buttercream onto each cupcake then top with a drizzle of caramel sauce.

Safari Minnie Mouse Cupcakes

These Safari Minnie Mouse cupcakes are inspired by her explorer’s spirit and curiosity. These decadent chocolate cupcakes are topped with delicious peanut butter and coconut frosting. Can’t forget her adorable animal print ears and a cute bow!

One of my favorite experiences at Disney’s Animal Kingdom is the Kilimanjaro Safari. Of course, after I am done exploring the savannah I want to get some fabulous photos with Safari-ready Minnie Mouse. She is just adorable, these cupcakes are just as adorable!

Please don’t let the fondant scare you away. It is not as hard as you think to work with.

How to Make Safari Minnie Mouse Cupcakes

All the Ingredients and Tools you will need:

  • 1 package of Wilton White Fondant
  • 1 Black and Brown Edible marker  
  • Cheetah cookie stencil (or you can freehand)
  • Stripe cookie stencil
  • 1 2 in round fondant cutter 
  • 1 Wilton Fondant Bow mold
  • 1 can of red cake spray 
  • 1 can of silver cake spray 
  • 1 Rolling pin
  • 1 cookie sheet with silicone mat
  • 1 box of chocolate cake mix
  • 1 ¼ C of whole milk
  • 1/2 C unsalted sweet cream butter, softened
  • 3 large eggs
  • Vanilla and peanut butter frosting
  • 1 C unsalted sweet cream butter, softened
  • 3 C powdered sugar
  • 2 tsp pure vanilla extract
  • 3-5 tbsp heavy whipping cream
  • 1 large piping bag with a star tip
  • 1 medium ice cream scooper
  • 3 C toasted coconut
  • ¼ C creamy peanut butter

How to Make the Fondant Minnie Ears

This process takes 2 days.

Sprinkle some cornstarch onto the cutting board.

Remove the white fondant from the package and knead the fondant on the cutting board to make the fondant soft and workable.

Sprinkle some more cornstarch onto the cutting board and roll the fondant ¼ inch thick.

  • Using the round fondant cutter, cut out 40 round circles

Place them onto the cookie sheet.

Using the black edible marker and the cheetah stencil, place the stencil over 1 white fondant piece and carefully and gently trace the lines of the cheetah spots

Once done, set the fondant piece aside and continue on with the rest of the white circles 

Once all have been drawn on, take the brown marker and fill in the black lines to create the spots

Once completed, take the silver cake spray and lightly spray the fondant circles to give it a shine. 

Allow to air dry for a couple of hours

Making the bow:

  • Pinch off about 1 tbsp of white fondant and press into the larger bow mold
  • Carefully remove and place onto the cookie sheet and allow to dry
  • Once the bow is dry, place the stripe stencil on the bow

Lightly spray the red cake spray onto the bow 

Allow to dry.

How to Make the Chocolate Cupcakes and Peanut Butter & Coconut Frosting

Make the cupcakes the day before so they have time to fully cool. Instead of following the directions on the box we are going to add a little more richness to the cupcake by swapping the water and oil for milk and softened butter.

Cupcake Directions:

  • Preheat the oven to 350 degrees and line a cupcake pan with liners
  • Using a large bowl, beat together the cake mix, milk, butter, and eggs until combined and smooth
  • Fill the cupcake liners ¾ way full
  • Bake in the oven for 21 minutes

Allow cupcakes to cool completely.

Frosting Directions:

  • Using a standing mixer, beat together the butter, powdered sugar, vanilla, and heavy whipping cream until combined, smooth and stiff
  • Using the ice cream scooper, scoop frosting into the scooper and top the cupcakes with the frosting 
  • Using a butterknife, gently spread the frosting into a thick round disk

Roll the frosted cupcake into the toasted coconut.

  • Set aside and complete steps with remaining cupcakes 
  • Using the remaining frosting in the bowl, beat in the creamy peanut butter until combined 
  • Scoop into the piping bag
  • Pipe dollops of the frosting into the middle of the cupcake

  • Place the bow in the middle of the cupcake

Place 1 ear on each side of the cupcake and then enjoy!

Frosting Directions

  • Roll the frosted cupcake into the toasted coconut 
  • Place 1 ear on the left side of the cupcake 
  • Place 1 ear on the right side of the cupcake

Last week was a memorable one as we celebrated Daniel’s first birthday party. I can’t believe he’s one year old already! My baby boy is seriously growing up too fast so someone, please stop the time! Choosing a theme for his birthday party was super easy as his favorite toys (apart from empty water bottles, TV remote control & cellphones) are all the plush animals around the house from monkeys to teddy bears to elephants.

This Safari / Jungle Themed First Birthday Party was completely styled by me – from choosing the decorations, designing my own banners to baking a cute jungle cake & his smash cake, cupcakes & cupcake toppers , jungle cookies and making all the finger foods (sushi included!). It’s a great party theme that I’m sure any kid would love regardless of the age and it’s a cute idea for a baby shower as well.

I wanted to make something special for Daniel’s 1 st birthday but at the same time we didn’t want to go overboard and spend a fortune. In this post I’ll show you how to throw a fabulous jungle birthday party on a budget for your little ones. Plus you can print all the labels, pennant banners, jungle animals stickers/toppers for FREE!

I made an easy BANANA PUDDING FOR MONKEYS. I don’t have a recipe on my blog but I like this Banana Pudding from Epicurious or this Homemade Banana Pudding from the Baker Chick . I adjusted the recipe a bit because I didn’t use any Vanilla wafers but placed half a ladyfinger in each dessert cup… just to keep things simple but still delicious!

Got some BERRIES FOR HIPPOS from the farmer’s market (blueberries, red & yellow raspberries and blackberries), placed them in some cups and made a few cute Hippo Toothpick Stickers (free printable coming soon in Part III of my post!).

Moving on to the cupcakes…oh my, I had so much fun decorating these JUNGLE ANIMALS CUPCAKES. They were Lemon Blueberry Cupcakes with Cream Cheese Frosting from Annie’s Eats. I’ve made Annie’s cupcakes before and loved them so decided to go with this recipe for the party.

I made every single JUNGLE ANIMAL FONDANT CUPCAKE TOPPER – from lions, teddy bears, monkeys to hippos, giraffes, tigers and elephants. Plus a few toppers with number one but you can personalize these based on your little one’s age.

Easy Raspberry Cupcakes: Sweet, Tangy, and Perfect Every Time

The only raspberry cupcakes you want to bake.

E ating a cupcake while enjoying your coffee or tea can be an afternoon indulgence. And, of course, you can have it as a sweet dessert after your delicious meal.

Now, when the summer is here, you would want to bring that warm and refreshing feel into your cupcake. So why don’t you create it in a raspberry cupcake?

These raspberry cupcakes are perfect for making the most of those summer raspberries. 

The cupcakes have a moist and fluffy texture with the right sweetness and a little tanginess from the fruits.

Top the cupcakes with creamy raspberry buttercream, and you will find the true joy of eating a cupcake. 

And what’s more, it is so easy and quick to make these cupcakes that it’s faster to bake them yourself than running to a bakery or a cake shop to get a similar thing. 

The first time I made these berry cupcakes, I was overjoyed with how easy it was to create and how delicious they were. 

And apart from the fresh raspberries, all the ingredients are pretty standard. Many of us will almost always have them in our pantry/ kitchen. 

Naturally, if you’re a keen baker like me, making your cakes from scratch gives you indescribable satisfaction. Because you know what you put in them, and you have full control of how much sugar you use. 

I don’t know about you, but I always find the cupcakes from the shops, bakeries, patisseries, or cake shops are way too sweet for my liking. 

The over-sweetness kind of killed my appetite for the cake. So yeah, I would prefer to whip the batter myself and bake. 

Simple Ingredients

As I said, the ingredients for these raspberry cupcakes are simple. 

The ingredients for cupcakes are raspberries, margarine (or baking spread), self-raising flour, caster sugar, eggs, and vanilla extract.

As for the buttercream, you will need salted butter, powdered sugar, milk, and seedless raspberry jam. 

And you’ll love this recipe because you can use fresh or frozen raspberries. Just check the tip below if you choose the latter.

Though I won’t debate which one is better or healthier, I understand that some people prefer butter to margarine. Feel free to use butter instead of margarine if you’re one of them.

The only thing I would mention is that butter may cause the texture of the cupcakes to be slightly dense and dry. While margarine creates softness and moistness in the cupcake texture. 

Easy To Make 

The method for making these cupcakes is ridiculously simple and easy. Dump and mix all the ingredients in a mixing bowl until you get a smooth batter.

You can either use a hand mixer or a handheld blender. 

When it comes to making buttercream, ideally, you use a stand mixer with a splash guard. The reason is that you prevent powdered sugar from splitter-splatter everywhere.

However, if you don’t have a stand mixer, you can try to mix the butter and icing sugar using a wooden spoon first. And use a hand mixer to make it fluffy.

And if you use a mixer but don’t have a splash guard, you can cover the bowl around the whisks with a cling film, as you can see how I did in the picture.

I’m not going to lie. As much as I like buttercream, I sometimes hate making it. Especially when the temperature is cold, and the butter is frozen solid.

Tips to make the most delicious raspberry cupcakes.

  • The good thing about this recipe is that you can use fresh or frozen raspberries. The fresh ones are the best. However, the frozen ones make equally delicious cupcakes. But make sure you thaw the raspberries entirely and do so on a colander. This way, any liquid from the thawed raspberries will be discarded. 
  • Ensure your self-raising flour is still fresh and not stale. 
  • Make sure the eggs are at room temperature. If they are cold, take them out and place them in a bowl. Then, put warm water from the tap until the eggs are submerged. Leave them to soak until you can feel the egg’s temperature change.
  • Choose good quality raspberry jam or Converse. If you don’t have the seedless raspberry jam, you can use the seeded one. But make sure you warm it up and sieve it. Discard any rough pulp and the seeds before mixing the jam with buttercream.
  • If your butter is solid and hard, try using this trick to soften it. Take a glass bowl that is big enough to cover the butter. Heat the bowl in a microwave for about 2 minutes. Or, put hot water in the bowl for a minute before discarding the water. Then, put the bowl upside down and cover the butter with it. The heat from the hot glass bowl will help soften the butter. 

Storing Matter

Your cupcakes can be kept well at room temperature for about three days. And if you hold them in the refrigerator, they keep well for almost a week. The cupcakes in my household won’t last longer than three days. They will be gone by then. 

Should you feel like freezing them, you can. Freeze the iced cupcakes in a tight-lid freezer food container. They can be kept in the freezer for up to six weeks. 

Once your cupcakes are thawed, you must not freeze them.

Raspberry cupcakes recipe

  • Mixing bowls.
  • Handheld mixer

Ingredients

For the cupcakes.

  • 1 cup raspberries fresh or frozen (see the note)
  • 6 ounces margarine/ baking spread
  • 7 ounces caster sugar
  • 3 eggs lightly beaten
  • 8 ounces self-raising flour
  • 1 teaspoon vanilla extract

For the buttercream

  • 7 ounces salted butter softened.
  • 10 ounces powdered icing sugar
  • 2 tablespoons milk
  • 3 teaspoons seedless raspberry jam

Instructions

  • Place all the ingredients in a mixing bowl. Using a handheld mixer or a stand mixer, mix them until you get a smooth batter.
  • Preheat the oven to 180℃/ 356℉ or gas mark 4.
  • Line the cupcake tin with cupcake cases. Then spoon the cupcake batter into each case.
  • Bake for about 20-25 minutes until the cupcakes look golden and springy to the touch.
  • Leave the cupcakes on a cooling rack to cool down to room temperature before icing them with buttercream.
  • Beat the butter and icing sugar in a large mixing bowl until they are combined.
  • Add the milk and whisk the butter mixture until it becomes lighter in color and fluffy.
  • Mix the raspberry jam into the buttercream and whisk well.
  • If you use frozen raspberries, make sure you fully thaw them. Do so on a colander so any water from the frozen raspberries will be discarded.
  • If you don’t have seedless raspberry jam, just use ordinary seeded raspberry jam. Take about 3½ teaspoons, warm it up, and sieve it. Discard the pulp and the seeds. Use the sieved jam for the buttercream.
