Groups in southeastern Wisconsin will discover art, architecture, history and, best of all, a mouthwatering signature pastry

To me, biting into a rich, sweet, buttery, flaky kringle is one of the true joys in life, and many of my family members agree. It’s such a special experience that we often don’t think of kringle except during the holiday season. While kringle is one of our favorite things, many people, even Midwesterners living not far from southeastern Wisconsin, don’t know what it is. They should come to Racine, promoted as America’s Kringle Capital, and indulge in a few slices of this oversized, oval-shaped Danish pastry ring.

Though I have lived only an hour-and-a-half from Racine all my life, I had never stopped until I recently spent the day there checking out group-tour sites with Paul Holley from Racine County’s visitors bureau, Real Racine. The Wisconsin city, located on Lake Michigan just a little north of the Illinois border, is 62 miles north of Chicago and 23 miles south of Milwaukee. It’s easily accessible via Interstate 94. Aside from the tasty treat brought to America by Danish immigrants in the mid-1800s, Racine offers plenty to see and do, but my personal focus was that decadent Danish delight, so I was happy my day started with a behind-the-scenes of Lehmann’s Bakery , one of Racine’s five kringle bakeries. Joining a motorcoach group from Indiana, I was transfixed for an hour that went by quickly as we watched guide/demonstrator Wayne Palmer-Ball work with the dough and make kringles and other pastries right before our eyes. Charming, chatty and easy to understand, he answered our questions as he went along. Who would have thought that each kringle consists of 48 delicate layers of dough? Actually, the visit to Lehmann’s was so informative and so much fun that I would call it one of the best plant tours I’ve ever taken. It helped that we got samples of raspberry and almond kringle, along with some chocolate chip and sugar cookies right out of the oven. Pecan and raspberry are the most popular kringle flavors, but Lehmann’s also makes apple, cherry, Bavarian cream, key lime, lemon cheesecake, blueberry cheesecake, peach (in season) and other varieties. The bakery turns out 480 kringles an hour, or 2,400 a night. Each is hand-formed from long sheets of floured dough, filled with fruit, nuts or other goodies, and baked to a golden brown. While still warm, it is hand-coated with white icing. Most of the kringles are shipped to Sam’s Club and other stores around the country.

Group tours of Lehmann’s are $3 a person and can be arranged through Real Racine or by contacting the bakery directly. Tour members are given an online order form and offered a discount. Some people on our tour purchased kringles ($7) at the store. (Kringles, by the way, freeze well.) Larsen Bakery is the other Racine kringle bakery that offers tours of its production facilities. Other Racine claims to fame revolve around two famous names—SC Johnson and Frank Lloyd Wright. SC Johnson, most closely associated with Johnson floor wax for many years, makes household products like Pledge, Shout, Raid and Glade. Free tours of the SC Johnson campus, the company’s world headquarters, include visits to the Wright-designed SC Johnson Administration Building and Research Tower, the architect’s largest commercial project. The 1½-hour tour starts at the visitor center in the Golden Rondelle, which served as the company’s pavilion at the 1964-65 New York World’s Fair. First stop is the 15-level Research Tower, distinguished by bands of red brick alternating with bands of glass tubes. The tower’s labs were the birthplace for brands still around today. Beakers, burners and test tubes, along with TVs playing vintage commercials, are merely museum pieces, as the tower, opened in 1950, closed as a workplace in 1982. It reopened to the public in 2014. Second stop at SC Johnson is the half-acre Great Workroom in the three-level Administration Building, where visitors see employees in the legal, financial and auditing departments busy at their desks. Supporting the 31-foot-high ceiling are 62 dendriform concrete columns, which rise from nine-inch bases to become 18½-foot-wide “lily pads” at the top; they’ve been compared to golf tees, trees and mushrooms. You can sit at a Wright-designed desk with rounded corners and swivel drawers. Fortaleza Hall , the last stop on the tour, opened in 2010 as a tribute to late SC Johnson chairman Sam Johnson. Designed by Foster + Partners of London, the glass-and-steel structure displays a replica of the seaplane used by Sam and his sons, Curt and Fisk, in 1998 to recreate the 1935 expedition of his father, H.F. Johnson Jr., to Fortaleza, Brazil. He had gone there to study the carnuba palm, a key ingredient in floor and furniture care products. Tour members have 20 minutes to peruse Fortaleza Hall’s Johnson family history timeline, advertising and product displays, and Frank Lloyd Wright gallery. (Fisk Johnson is today’s fifth-generation leader.) The small Lily Pad gift shop offers items like packets of Shout, bottles of Windex and Fantastik, Off! bandanas and Glade T-shirts. Wisconsin-born Wright also designed Wingspread , the last and largest of his Prairie-style homes (1937), for H. F. Johnson Jr. Located in the village of Wind Point, the residence is now a conference center operated by the Johnson Foundation of Wingspread. Free tours are available.

The Johnson family was instrumental in the creation of downtown’s world-class Racine Art Museum (RAM), the nation’s largest collection of contemporary crafts. Pieces from Karen Johnson Boyd, who collected crafts of all kinds, provided the foundation for the museum. Works range from ceramics and fibers to glass, paper, metal and wood. In addition to rotating exhibitions from its permanent collections, RAM brings in traveling exhibitions. A sculpture courtyard overlooks Lake Michigan. Nearby is the free-admission Racine Heritage Museum , which has exhibits on Racine County’s maritime history (Racine was an important Great Lakes commercial shipping port), the Underground Railroad, Frank Lloyd Wright and early industries like Mitchell Manufacturing, a maker of wagons and cars until 1922. Groups left off at Monument Square (between RAM and the heritage museum) for lunch and free time have a choice of many restaurants and shops on and off Main Street. Another lunch option: Reefpoint Brew House , at the downtown marina, has a dining room surrounded on three sides by views of Lake Michigan. There’s a private party room with bar. I recommend the grilled bacon-cheese-meatloaf sandwich with Cajun fries.

Besides buildings designed by Wright, architecture fans like the Southside Historic District , a 42-block neighborhood along Lake Michigan where substantial homes were built between the 1850s and 1920s. For no charge, Real Racine can provide a step-on guide for touring the town and historic district if the group overnights in Racine.

A noteworthy structure worth a photo stop is Wind Point Lighthouse . Built in 1880, the oldest and tallest operating lighthouse on Lake Michigan houses Wind Point’s village hall. Another group tour option in Racine County is the 2.5-hour walking tour of Case-New Holland’s tractor assembly plant . Guided by retired employees, the tour shows each step of the manufacturing process, from engines being painted by robots to tires being mounted. I concluded my day in Racine the way it started—with a kringle bakery stop. This time it was O&H Danish Bakery’s flagship store on Washington Avenue, an attractive new space with a cafe, descriptive panels of the company’s history and elements of Scandinavian decor. O&H does not do a production-facility tour, but a talk to groups can be arranged in the store or on the bus. Samples are available in the store. O&H makes more than 30 flavors of kringle. Popular choices include the Wisconsin Kringle, which is filled with cherries, cream cheese and cranberries (Wisconsin is the top cranberry-producing state.) Or try the Turtle—caramel, chocolate and pecans. O&H’s location at the Petro station on I-94, close to the Real Racine visitor center, makes a convenient place for grabbing some of Wisconsin’s official state pastry before leaving town. But wait, there’s more! The Park High School choir is set to enchant audiences with a medley of holiday songs at Divino Gelato (11 am-11:30 am) and Red Onion (12 pm-12:30 pm), adding an extra dash of festive cheer to the experience.

Here's your guide to racine, wis., the nation's kringle capital.

A visit to the nation's kringle capital practically demands a citywide kringle taste-test, right?

It was easy. And fun. From my favorite band of Racine residents — my husband's family — I learned that the city boasts four primary kringle bakeries.

After devoting a pile of cash — and maybe an hour of driving around and buying both a fruit kringle and a nut kringle from each bakery — I gathered a discerning squad of lifetime kringle consumers: my sister-in-law, two of her daughters and their three teenage sons. Over the course of an hour, we sampled all eight kringles, carefully assessing each oval-shaped pastry in terms of flavor, texture, appearance, freshness and all-around appeal.

The unanimous favorite was the pecan kringle from 86-year-old Bendtsen's Bakery (3200 Washington Av., Racine, Wis., 1-262-633-0365, bendtsensbakery.com ).

It's the bakery's top seller, by a mile, and it's easy to see why. The pastry was deeply golden and genuinely flaky and tender, and the filling, with its hint of butterscotch, was packed with plenty of nuts. It also lacked the toothache-inducing sweetness of its competitors. A sign on the bakery's awning trumpets that it's home to "Racine's No. 1 kringle," and it's reassuring to see that truth in advertising really does exist.

Just up the street at the modest Larsen Bakery (3311 Washington Av., Racine, Wis., 1-262-633-4298, larsenskringle.com ), the handmade kringle was nearly as impressive as its neighbor's. Kudos to the cherry kringle; its filling boasted a vivid color and spot-on flavor. The pretzel-shaped kringle neon sign in the bakery's window is a sweet history-minded touch.

If the Mall of America were to land a kringle-teria (and really, that's not a half-bad idea) it would probably resemble the elaborate, branded-to-the-hilt outpost of O&H Danish Bakery (O&H has five locations, including 5910 Washington Av., Racine, Wis., 1-262-504-7000, ohdanishbakery.com ) on the west side of town, which had, yes, two tourist buses parked out front when I visited. Because it's available at Trader Joe's, O&H is probably the city's most recognizable kringle producer, but fame is not necessarily synonymous with appeal. O&H's most memorable asset is its boundary-stretching sense of fun: pumpkin-caramel kringle, Turtle kringle, Key lime kringle, cinnamon roll kringle, even an iced "birthday" kringle. But the kringle itself? Meh.

Occupying the bottom rung of our kringle-a-thon was the disappointing Lehmann's Bakery (9117 Durand Av., Sturtevant, Wis., 1-262-632-4636, lehmannsbakery.com ), where the output was greasy, leaden and alarmingly sweet.

The primary downside to Racine's bakery-made kringles is that they would benefit from butter, or more butter. Shortening, margarine and other price-conscious fatty shortcuts don't cut it, which is why an all-butter, make-at-home kringle is a superior product. It's just not as convenient as its commercial counterparts.

Kringle has been part of our winter holiday celebrations for decades, and Larsen's has always been there for us. Even though now we live far away, the Kringle ships well (when USPS has their act together) and freezes well.

There was a problem with the order being filled correctly. When I called to let you know the problem, you were quick to send the cherry that had been omitted. Will always order from Larson's because you have to best kringle and customer service.

The Kringle was delicious as usual. I just didn’t like that I was charged more than the advertised price for a 2 pack.

The pecan dreams taste like how they look! Dry and crumbly pastry with a nice amount of pecan flavor. Pecan pieces are chopped small and fit in well. Covered with a good amount of powdered sugar but are not too sweet. A more sophisticated European tasting pastry. My family loves them. They came very well packaged with no damage at all and delivery was quite fast.

Both the almond and the poppy seed crescents are excellent. Beautiful flaky dough, the fillings are flavorful but not too sweet. They are really a taste of Europe. We drive from Chicago to buy them. Now have turned to ordering because of the lockdown. The web site makes it easy to order, they arrive well packaged and in good shape. Larsen's crescents are the best! My family highly recommends them.

I thought that once I went vegan I would never be able to have Kringle again — boy was I wrong. Larsen’s Bakery not only bakes a vegan Kringle, but excelles in every way. I cant wait to try every flavor you have!

Luke was our tour guide this morning...mimosas, bloody marys, bloody Marias, beermosas, -- all delicious, plus delicious food -- and learned a lot about the history of the city, the architecture, etc... Luke was laid back, rolled with the punches, and was quite the charming guide.

My friend and I went on the pre-prohibition tour of Milwaukee. What a great tour! Again, learned a ton about the history of this amazing city and got to spend time in 4 spectacular treasures. Robert did a great job telling us about the history of the 4 fascinating bars/taverns. The awesome thing about these tours is that this is my 4th different tour and not a single one has covered the same area of Milwaukee. By the time I go on all the different tours (which IS my goal), I think I will cover all of the greater Milwaukee area :)

Very enjoyable tour of the city's lights, and the desserts and beverages were the icing on the cake! Bad pun aside, it was something I would do again with friends and family. As an additional note: the staff was wonderful at accommodating my girlfriend's Celiac disease, and provided us gluten free options for all three dessert stops.

Industrial Milwaukee

  • Using your coach, enjoy a scenic drive through the city known as the “Machine Shop of the World.” Your sightseeing journey will take you past historic landmarks, such as the Rockwell Automation Headquarters, its facade sporting one of the largest four-faced clocks in the world, as well as Miller Brewery and the headquarters of iconic motorcycle brand Harley Davidson. 
  • We'll stop at the iconic Harley Davidson Museum for a spotlight tour along with a sit-down lunch at Motor, located on the Harley Davidson campus, which is included in the price.

As the date gets closer, you’ll want to let us know your tentative numbers so that we can alert the locations as we confirm our reservations with them. Then one week prior, we will need a final head count, list of any vegetarians or food allergies, and payment via credit card, ACH transfer or check. 

For all of our group travel tours, the items noted in the above itineraries (such as food, drinks and attraction admission costs), taxes, and gratuities at each restaurant are are included in the per person cost. We also require a $175 per day booking fee which will be included on your invoice once a final head count is provided at least 5 days prior to event date.  This booking fee covers tour guide gratuity, credit card processing fees, and administrative planning time.

Our Group Travel offerings have pricing reflective of utilizing your bus and driver for the tour. If you need a bus, please ask and we’re happy to provide pricing to utilize our buses. We do have a 30 person minimum on our group tours; if you anticipate less than 30 guests, we’re happy to create a custom tour price for your group.

We’re proud of our family bakery, and we work hard to continue to use the same time-honored recipe Danish bakers brought to Racine, Wisconsin in the late 1800s. Our third generation bakery was started over thirty years ago because we wanted to share our love of Kringle with the people of Wisconsin. Christmas Carnival of Lights

For the 14th year in a row, families can see one of Wisconsin's largest drive-through light displays filled with more than two million twinkling lights synchronized to music. The Carnival of Lights is organized and run by local, family-owned and operated Jellystone Park in Caledonia.

Witness unique moving light displays including a 200-foot-long drive-thru light tunnel from the comfort of your own vehicle. Another fan-favorite seating option includes riding in Santa’s Giant Sleigh, which comfortably seats 43 guests and is the most spectacular way to view the moving lights high in the trees. Santa's Sleigh is a great option for large families that want to experience the light show together. You can also take a ride in the Golf Cart Holiday Train for a personalized open-air experience.

Hours are Sunday to Thursday from 5 to 9 p.m., and Friday and Saturday from 5 to 11 p.m. General admission entry fee for carloads with up to eight people is $30, large passenger vans is $45, and buses/campers is $55. Enjoy the 25th annual Christmas Parade with a tree lighting, fireworks and visit with Santa on December 2  as hundreds of Waterford and surrounding area residents celebrate Christmas in the streets of downtown Waterford!

The parade begins promptly at 5:00 p.m. when the VFW steps out to lead the march through downtown as children and families excitedly wait for the colorful, sparkling lights and, of course, candy. Many businesses and organizations participate with brightly lit floats and other vehicles. Weather permitting, the area schools play music while marching, and gymnasts tumble in the streets. Santa and Mrs. Claus always make an appearance and you can visit them in their new Christmas Chalet after the parade at The Corner Lot Park at First and Main Streets.

The Choral Arts Society of Southeastern Wisconsin (CAS) is presenting its 31st annual Lessons and Carols Concert at Racine's First Presbyterian Church on December 2 at 7 p.m. Experience one of the area's most popular holiday traditions! For 31 years, people have come back again and again to experience the hope, joy, wonder, love, and peace of the Christmas story. This season's presentation will feature a program of both English and American songs. Old and new carols combined with traditional readings take us from the creation story through the prophecy, birth, Wise Men's journey, and unfolding mystery of the incarnation. Listen, sing along, and share the holiday experience as CAS honors this hallowed tradition of music and spoken word.

CPKC Holiday Train   December 3 Sturtevant and Caledonia  

Canadian Pacific Holiday Train

The CPKC Holiday Train is traveling back to Wisconsin this holiday season! This FREE event will raise money, food and awareness for local food banks with two stops in Racine County. The Holiday Train will feature performances by singers Tenille Townes and BRELAND. On December 3 , the train will stop at the Amtrak Depot, 9900 E. Exploration Court, Sturtevant, at 6:45 p.m. The show will start at 7 p.m. and end at 7:30 p.m. From there, the train will travel to Caledonia and arrive at 8 p.m. at the railway crossing at 11402 County Road G. The show will start at 8:15 p.m. and end at 8:45 p.m. before departing for its next stop.

The CPKC Holiday Train is all about families and communities coming together to celebrate the season and help those in need. Attendees are encouraged to bring cash or non-perishable food donations. Local food shelves will set up collection stations at each event with all donations made staying at the local food banks to help people in the community in need. A kringle is a flaky, buttery pastry with deep Northern European roots. Danish immigrants brought the tradition for making the original pretzel-like specialty with them to their new homes in the small town of Racine, WI. After combining Danish and American baking techniques, the Wisconsin kringle was born: a shareable large oval pastry that gets filled with various ingredients like nuts, jams, and chocolate and coated in a thick, sweet icing. Often served during the holiday season (but delicious year-round), the pastry is now referred to as the “official Wisconsin pastry.”

Not in Racine? No worries, as you’ve likely seen them at Trader Joe’s, where the notable O&H Bakery sells its beloved kringle. But it’s worth making fresh kringle at home. Almond is a classic flavor for a kringle, and cherry complements the nut filling beautifully, offering tartness that cuts through the almond’s sweet richness. I absolutely adore almond extract , but many people find it overpowering. It’s optional here to give you flexibility.

Be mindful that this recipe is no doubt a baking project . It requires time, patience, and a delicate hand. However, the lamination technique of using softened butter instead of chilled (a popular method for laminating dough) helps make the intimidating process more approachable. And if you want to split up the labor, make the dough the day before (up to step 3), and leave the baking and assembly for the day of. The kringle is ideal for brunch or as a treat that keeps giving all week long.

Filling and Assembly

Preparation.

Heat ¼ cup whole milk in a small saucepan over medium heat until lukewarm (an instant-read thermometer should register 110°–115°), about 2 minutes. Pour milk into a large bowl and whisk in ¾ tsp. active dry yeast and ¼ tsp. granulated sugar . Let sit until milky and lightly foamy, 8–10 minutes. (If the yeast doesn’t foam, discard and start again with new yeast.)

Meanwhile, whisk 1¼ cups plus 2 Tbsp. (172 g) all-purpose flour , 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt , and remaining 1 Tbsp. granulated sugar in a medium bowl to combine.

Add 1 large egg to yeast mixture and whisk to combine. Add dry ingredients and mix with a rubber spatula until a shaggy dough forms. Using your hands, gently knead and mix dough in bowl until a rough, slightly sticky ball forms. (Be careful not to overmix; some dry flour pockets are okay.) Cover with plastic wrap and chill at least 2 hours and up to 12 hours.

Mix 10 Tbsp. (1¼ sticks) unsalted butter, room temperature , and remaining 2 tsp. (3 g) all-purpose flour in a medium bowl with a spoon until combined. (It is important that the butter is very soft; it should spread easily with a spoon. If needed, microwave in a microwave-proof bowl on high in 5 second bursts just until softened.)

Remove dough from fridge and unwrap. Roll out on a lightly floured surface to a 12x10" rectangle. Arrange dough so a long side is closest to you. Using an offset spatula, spread butter mixture evenly over right half of dough, leaving a 1" border around edges. (This will keep the butter from leaking out during the initial fold.) Gently fold left side of dough up and over to bring edges together. Press and seal unbuttered edges of dough together with your fingers. If there are any air bubbles, gently press the surface to release.

Rotate dough clockwise 90°. (Dust dough lightly with more flour if it’s sticking.) Working quickly, roll out dough to a 16x9" rectangle. Lift left and right edges in toward the center so they meet in the middle, then fold left side over and onto right side, matching up all corners (this is your book fold process). Transfer dough to a parchment-lined baking sheet and freeze, uncovered, 15 minutes.

Remove dough from freezer and turn so long seam side is nearest to you. Repeat rolling out, folding, and freezing process (step 6) two more times, dusting with more flour if needed. (You should have created a book fold 3 times when you are done.) Loosely wrap dough in plastic and chill at least 30 minutes and up to 12 hours.

Process 1 large egg white , 3.5 oz. almond paste , ¼ cup (50 g) granulated sugar , 2 Tbsp. unsalted butter , 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt , and ¼ tsp. almond extract (if using) in a food processor until combined (filling will be loose). Transfer filling to a medium bowl.

Unwrap dough and place on a lightly floured surface with a long side closest to you. Working quickly to keep butter from getting too warm, roll out to 25x8". Spread filling down center with offset spatula or a spoon to make about a 3"-wide strip, stopping 1" from the end of a short side and going all the way to the edge on the other side. Spoon ¼ cup cherry jam on top of filling (it may seem like a small amount, but it’s enough!).

Lift long side closest to you up and over about half of filling. Dust off any excess flour (it will prevent a secure seal later) and bring other long side up and over filling to meet the first. Press edges together lightly to seal. Set a parchment-lined baking sheet close to kringle and in one swift motion, lift from each end onto baking sheet. (A large offset or metal spatula can help you if needed.) Carefully turn kringle over so seam is facing down. Bring ends together to create about a 12x7" oval, centering on baking sheet the best you can. Insert end of dough with filling all the way to the edges into other end about 1" (the filling on both ends should meet up). Using your fingers, pinch at edges to seal tightly. Make sure filling is evenly distributed throughout ring by moving your hand gently over oval. Cover with a kitchen towel and let sit at room temperature until just barely puffy, 30–45 minutes.

Place a rack in middle of oven; preheat to 350°. Whisk 1 large egg yolk and 1 tsp. water in a small bowl and brush egg wash over entire kringle. Bake until golden and puffed, 15–18 minutes. Reduce oven temperature to 325° and continue to bake until deep golden brown, 7–10 minutes more. Let kringle cool on baking sheet at least 1 hour before glazing.

Whisk 1 cup (110 g) powdered sugar and 1 Tbsp. plus 1 tsp. whole milk in a small bowl until smooth. The consistency should be thick yet pourable like glue. If too loose, add more powdered sugar. If too thick, add more milk.

Spoon glaze over kringle, aiming for the middle. Using a spoon, spread glaze over top to evenly coat (keep sides unglazed). Sprinkle with 2 Tbsp. coarsely chopped unsalted roasted almonds if using. Let kringle sit at least 30 minutes for glaze to set before serving.

Do Ahead: Kringle can be made 4 days ahead. Store lightly wrapped at room temperature.
