The National Turkey Federation (NTF) and the American Meat Institute (AMI) released a video presentation of a turkey farm and processing plant hosted by leading animal welfare expert Temple Grandin, Ph.D., professor of animal science at Colorado State University. The video is available on NTF’s YouTube channel http://youtube.com/NatlTurkeyFederation or by visiting AMI’s “Glass Walls Project” at http://www.animalhandling.org/ . 

Grandin guides the viewing public with an expert eye on the growth and delivery of 253 million turkeys each year. In the video, the viewer gets an up-close look as Grandin interacts with a flock of 1,500 birds roaming easily down the football-field length of a climate-controlled turkey house. When readied for market, those turkeys ride up into conveyor loading trucks and to an orderly delivery at the processing plant. There, the process of humanely stunning the birds renders them unconscious before processing under the watchful presence of USDA government inspectors enforcing safe and sanitary preparation. At each step along the methodical movement of rinsing, cleaning and separating the meat from the carcass, Grandin provides context and common sense explanations. The reality of raising and preparing turkeys for market is revealed in the video for what it is: a modern process that is humane, safe and efficient.

“I’m really pleased that the industry wanted the public to see this process because I think we need to show people how it’s just done right in a typical plant,” Grandin said. “There’s a lot of good work going on in animal agriculture and I’m glad we’re telling our story openly and honestly.”

“The generations that have moved away from the farm to the city take a personal interest in seeing how their food is raised,” said National Turkey Federation President Joel Brandenberger. “Those farms are far from the cities but in this video are brought closer through Dr. Grandin’s one-of-a-kind way of explaining the orderly process of getting turkeys to market.”

“The responses to these ‘glass walls’ efforts have been remarkable. More than 120,000 people viewed our beef and pork plant video tours and this latest turkey video tour will bring more fact-based information to consumers who seek it,” said AMI President J. Patrick Boyle. According to Boyle, hundreds of teachers have written to AMI seeking “Glass Walls” materials to use with their students, including a print piece that was reviewed for accuracy by Grandin.

  • I do not understand why people are not aware of the importance about the work of Dr. Temple Grandin. She gave each animal a personality and explains about animal needs. Without her many, many people would still see 'animal industry' as non animals. They are! They all are individuals with feelings, emotions and the right to be somebody in stead of someTHING. Please do not deny animals but face it, face reality and support the ones who really (can) make a difference for the benefit of Animals.

  • Grandin is responsible for two major developments: 1. helping consumers concerned about animal suffering feel better about eating more meat, dairy and eggs and 2. giving the meat industry exactly what they need: a positive, "humane" face (through all of her endorsements) as well as more efficient and productive extermination technologies. The result is a record number of animals killed for food than at any time in history. The animals are the ultimate losers of her alleged love of animals.

There are so many other healthy, life affirming ways to celebrate ThanksLiving. Latest transparency video: grandin hosted turkey plant tour.

As part of the protein industry’s move toward transparency, the National Turkey Federation and the American Meat Institute have created a video tour of a turkey farm and processing plant hosted by animal welfare expert Temple Grandin.

In it, Grandin interacts with a flock of 15,000 birds and takes the viewer all the way through the stunning and slaughter process, providing context and common sense explanations.

“I’m really pleased that the industry wanted the public to see this process because I think we need to show people how it’s just done right in a typical plant,” Grandin said in a news release. “There’s a lot of good work going on in animal agriculture and I’m glad we’re telling our story openly and honestly.”

Raising America’s Turkeys

Raising turkeys is around-the-clock work. In 2022, more than 210 million turkeys were raised on about 2,500 farms across the United States, with the majority being family farms. NTF is working to amplify the hard work done by the men and women across the turkey industry to support America’s robust food supply. Read on to learn more about raising turkeys and the turkey production process in the United States.

Raising Birds to Maturity

The anatomy of a mature broad-breasted white tom turkey

Broad-breasted White is the most commonly domesticated breed of turkey. This breed is raised to produce more breast meat and meatier thighs and is recognizable by their white feathers. Other variations, such as heritage turkeys, are also bred in niche markets.

Turkey eggs are tan with brown specks and are larger than chicken eggs. The incubation period to hatch a turkey egg is 28 days. Once hatched, a baby turkey is called a poult and is tan and brown. Male turkeys are called toms, while female turkeys are called hens.

Fun fact: Broad-breasted turkeys are bred with white feathers, so they leave no unsightly pigment spots under the skin when plucked.

How Turkeys Are Raised

American farmers are raising turkeys in scientifically designed,  environmentally controlled barns  that provide maximum protection from predators, disease and weather extremes. They are fed a balanced diet of corn and soybean meal mixed with a supplement of vitamins and minerals. Genetic improvements, better feed formulation and modern management practices are responsible for the size of turkeys produced today.

On average, it takes 75-80 pounds of feed to raise a 38-pound tom turkey. Feed ingredients account for roughly two-thirds of the cost of raising a turkey. Modern production methods have shortened the time it takes for turkeys to reach maturity. A hen usually takes 14 weeks and weighs 15.5 pounds when processed, but a tom takes roughly 18 weeks to reach a market weight of 38 pounds. Hens are typically processed and sold as whole birds, while toms are often further processed into products such as cutlets, tenderloins, turkey sausage, turkey franks and turkey deli meats.

To maintain production continuity, laying hens are artificially inseminated in a controlled environment. During a 25-week laying cycle, a hen normally lays 80-100 eggs. At the end of this cycle, the hen is “spent” and usually processed. Some breeders choose to molt the hen (allow a resting period) before another production cycle. This process takes 90 days; however, the second laying cycle will produce slightly fewer eggs (75-80).

Dedication to Animal Health

To prevent disease when raising turkeys, turkey growers rely on vaccination, biosecurity against outside contamination, good hygiene, best management practices and placing newly hatched poults certified free of specific infections. However, just like humans, animals sometimes get sick and need further medical attention. NTF and the turkey industry are working together to identify and address some of the biggest health challenges facing turkey production today.

Antibiotics have been safely used in animal agriculture for half a century to treat and control disease in animals and improve the animal’s overall health. Advancements in genetics, veterinary management and animal disease research have led to improved animal health and less reliance on antibiotics. In addition, the turkey industry supports alternatives and new mitigation strategies to support challenges producers face.

Turkey growers not only care for the animals they raise, but they are also dedicated stewards of the land and take precautions to ensure their farms’ longevity through sustainable agriculture practices. Many turkey farms have been active for generations and are passed down through the family. Sustainability is tantamount to the success of the growing operation and is becoming a standard across the turkey industry.

A video tour inside a turkey processing operation brings transparency to the process.

Modern technology and equipment is helpful in handling animals in a manner that minimizes stress on them. For instance, turkeys are loaded into trucks using conveyor belts that keep the turkeys upright and minimize fatigue on employees that are loading the trucks. Turkeys are able to stay in the holding crate from the trailer until it is time to unload them for stunning. Unloading is done in almost full darkness to keep birds calm.

Turkeys are commonly stunned using CO 2 stunning or electrical stunning which can occur in a waterbath where a current is delivered at the same time the head is immersed in water. Stunning renders an animal insensitive to pain and unconscious instantly. This must be done before slaughter occurs. The Poultry Products Inspection Act is overseen by the U. S. Department of Agriculture Food Safety Inspection Service and allows each step of the process to be monitored.

After turkeys are stunned they are bled. Scalding occurs to loosen the feathers before removal. The guts are removed and carcasses go into tanks of chilled water for several hours to lower the temperature of the carcass rapidly. Turkey carcasses are removed from the chilled water and further cut into different parts and pieces made available for purchase by institutions, restaurants, and grocery stores.

Different food safety interventions are included throughout processing to minimize contamination of bacteria that may cause foodborne illness. Michigan State University Extension recommends proper handling and cooking of poultry is important to ensure food safety.

This video goes into detail showing the entire process from walking through barns of finished turkeys ready for market to cutting the turkey carcasses into parts and pieces for sale.

Poultry Slaughter Plant and Farm Audit: Critical Control Points for Bird Welfare (Updated July 2009)

The video shows each step in the slaughter process, including the unloading of the trucks, the handling of lamb in the pens, the stunning process, food safety practices and the steps involved in breaking a carcass down into cuts of lamb.

Grandin has narrated other “Glass Walls” videos including a tour of a beef processing plant. The “Glass Walls” project is a series of videos that seeks to bring transparency to the meat processing industry by showing animal care and handling processes used in meat packing plants.  Other “Glass Walls” videos focus on pork and turkey plants and the series has generated more than a 1.2 million views online.

Oversight And Regulation Of Animal Handling

In federally inspected facilities, humane handling is overseen by the federal government by the U.S. Department of Agriculture’s Food Safety and Inspection Service (FSIS). Federal Humane Slaughter Act regulations are enforced by FSIS and specify the proper treatment and humane handling of livestock. The law’s provisions are numerous and include the following requirements:

  • Livestock need to be handled calmly with minimal excitement.
  • Livestock should never be dragged.
  • Objects that cause unnecessary pain not be used to drive livestock.
  • Water be provided in holding pens at all times.
  • Feed be provided if an animal is at a plant more than 24 hours.
  • Livestock be rendered completely unconscious prior to slaughter.
